Thank you! I have been very happy with those sweet potatoes that I dehydrated last year. I expect them to keep for a long time. They cook up very nicely.

I don't know how to garden, but I recently started buying sweet potatoes and my husband and I really like them so I found this video by searching how to dehydrate them. I haven't watched the entire video yet as I stopped it when she said she kept sweet potatoes for a year???? Oh, wow! What if I buy them from the store? Can I store store bought ones that long? If so, how do you store them? Thank you, in advance, for replying. I am off to watch your video now! : )

Most likely you can only store sweet potatoes that you've personally grown for 1 year. We have no idea how long a sweet potato has been held in storage before being shipped to grocery stores.

@@catsebn927 you're welcome. You can however, buy store bought sweet potatoes, grow slips from them and then have your own sweet potatoes. They can be grown in containers if you don't have a yard. Make sure the container or ground you plant them in has loose loomy soil that is free draining and that it is amended with cow, chicken, or rabbit manure as well as a bit of phosphorus. Depending on your climate or USDA Hardiness Zone you can start growing slips in February/March and have them ready to plant outside in April/May. Then they're ready in 120 days. BTW 1 potato or even half a sweet potato can produce 15+ slips. If growing inside a container try to use only 1 slip per container, if growing in ground make sure they are spaced 12 inches apart. Just let them vine out but be careful about them making contact with surrounding area as they will try to root and grow and this will result in overall smaller potatoes. When you see it make contact with surrounding soil other than where it was initially planted, pull up the vine and prevent it from establishing more roots to ensure larger sweet potatoes. I grew 17lbs of sweet potatoes in 12.25 sq ft area so you don't need that much space.

I have rehydrated by soaking in water for a little while and boiling them. They taste and feel like freshly cooked sweet potatoes to me. Thanks!

The problem with most ovens is that you can't turn the temp down low enough.

+The Antique Autistic i explained on the video that the temp was 140; on the high end for vegetables. I expect that they can lay for several years, if stored dry and dark. Thank you

+The Antique Autistic after I've thought about this, i decided that i didn't originally understand your question. The raw set potatoes were stored in the box i showed, in my house at normal house temps. Wood stove in the winter, ac in the summer. They did sprout, but since it was dark the sprouts were weak. I was fairly surprised, myself, at their condition after one year storage.
