Dehydrating Tomatoes

How I dehydrate and store some of my garden tomatoes. Though I do can a lot of tomatoes and salsa, I also love to have a lot of dried tomatoes on hand to use in many dishes.

I just started dehydrating and the first thing I did was shredded zucchini. I was amazed at how concentrated the flavor is! It is so good! I have to try some tomatoes next.

Your dehydrated tomatoes are beautiful. I love dehydrating, but I've got a question. I didn't think I could use any oil in dehydrated foods, unless it was something you were going to use rather quickly. I experimented with drying brown rice, left it for more than 6 months, then opened, and it had a rancid oil smell. Does the oil work because you eliminate the air with the Food Saver? Or is it the type of oil that makes a difference? This could be really helpful for some things. Thanks for sharing so much that is useful.
