I found the aluminium sheet on the web but nowhere it says what alloy it is, it looks stiff and brittle. I use unalloyed 2mm aluminum when I make tanks and fenders and such.

He failed to anneal the sheet. Aluminium is an excellent conductor of heat and him holding the sheet would have melted the glove on his hand. Ironically, he could have created a cool multi-folded edge - much like the basting tin you linked to. It would have given an interesting design. His hydraulic press and a hand made press die would easily do that.

Ironically I think them foil trays are the perfect example of how to form and clamping. Look how flat the base of the tray is. How sharp and perfect the corners are. It’s perfectly formed and it’s what 0.25mm thick

It's full name is 'mill scale' and it's a type of iron oxide (like rust, but different) that is formed on the surface of the steel during the hot-rolling process. When you see mild steel that's brand new, it has a kind of blue colour (and is shiny silver wherever you cut it, that blue stuff is the iron oxide "scale".
