I have to admit I've been using Chef John's recipe for the last three years - and it is delicious. Actually I was in the process of making tinga when I noticed your video. And as soon as I get my hands on fresh ripened tomatoes (it will take some time here) I will most definitely try out your recipe. It seems like small variations, but those tiny things make all the difference.

Just stumbled across your channel and I've already watched several videos! Your delivery is perfect .. not too fast, not too slow. You don't overcomplicate things or talk too much. I hate 30 minute videos that could be 10 ...lol. You gained another subscriber.

I used the tinga recipe to make my chimichanga filling, and it was AMAZING! I'm addicted to chimichangas and was spending way too much money at the mexican restaurant down the street, so I'm so glad I can now make them for myself! This tinga is perfect for them. Thank you!

Mexican store, but now a days some well known stores carry it. For example, Publix, Kroger and Wal-mart.

I'm here because Whole Foods started offering Chicken Tinga Enchiladas in soft corn tortillas in it's fridge section. Two with some rice and something for nine bucks. Excellent flavor, but my second purchase revealed hardly any chicken. And their idea of the chicken was to run it through a grinder. That's ok, but the dearth of chicken meant I had to learn to make my own.
