I've really been enjoying this Climate Blend Flour, and am SO happy that KA is bringing it to market! So far, I've made milk bread rolls and 36 hour cold ferment yeasted "sourdough" bread, and both have been fantastic. Both times, I sifted the bran out and added it to the outside of the rolls and loaf to make a really enjoyable crunchy crust. There's been some great articles written about the promise this grain. The best of which is to allow some latitude in variability to the farmers who are growing the grain to work with the soil they have and to provide them the compensation to help them farm for a healthier planet while delivering to us consumers an enjoyable product. These practices are core to the leading roasters in specialty coffee and have had significant beneficial impacts to farming communities, while yielding exceptional products. Perhaps this is the start of something great. Either way, I'm all for it if this helps regenerative processed flour hit the mainstream shelves. edit: …and it would be really great if it was organic!

We baked this lovely loaf last week but I keep on forgetting to leave a review 😹 Anyways, it’s a joy to work with from beginning to end and tastes wonderful with no bitter notes sometimes associated with wheat bread. It’s a very soft loaf so recommended to cut thicker slices for sammiches 😺 Thank you Best Bake Squad for helping us feel better about our bakes ❤️ Oh, also, we’ve started using it in our Starter and it’s a very happy Starter now!

Bread looked awesome. Is it a drop-in replacement for any KA whole wheat or white whole wheat? Or does it have different hydration needs?

Yep! While sandwich breads like this don't require scoring, you can certainly add some. Or you can add stenciling or top with seeds if you're looking for ways to jazz up its appearance. 😊 -🍮Kat

Can I just chuck it all in a bread machine? (Yes, I know it uses electricity to mix and knead the bread. However, it also uses far less electricity than my full size oven running at 325-350F for however long it needs to bake one loaf of bread.)

Hi Amy! Mixing the water and the whole wheat flour together first helps to hydrate the flour and soften the grain, it also helps with gluten development. This technique is called "autolyse"! -👩‍🍳Morgan

Because of the protein content in the flour of you add the yeast for the autolyse you run the risk of over-proving your dough. By adding it after the autolyse with the salt you mitigate this possibility.

I'm a T1 diabetic baker. The whole grain inclusion will help avoid spikes, but adding other fiber rich ingredients like flax seed/meal, bran, etc will further reduce the impact on blood sugar levels. You can also experiment with substituting in a portion of almond flour to help. Honey is less of a problem than processed sugars, but you can omit it if you're concerned (it's not a huge amount).

@@BruinEricI suspect you’re mostly being snarky, but I’ll bite. The benefits this style of wheat growing bring to reducing soil erosion and nutrient runoff vs conventional wheat still remain. Trying to avoid another dust bowl sounds pretty good to me. I hope that this becomes more widespread and economies of scale bring the price down.

Hey there! You can make this in a bread machine using a "whole wheat" setting. Before turning on the machine, be sure to mix together the flour and water and do the short rest before turning on the machine for kneading though, this helps to hydrate the grains and aids in gluten development. As a life long fan of King Arthur Flour, why did you name this flour “climate flour”, why not call it perennial wheat flour because that’s what you claim this particular wheat does, regenerating itself every year for several years. If this particular flour can withstand all sorts of things that are climate related, does that include build in resistance to pests? If it does, I will not purchase this flour because it will mean that it is bio engineered which is not desirable and not something I would want to consume.

You're going to see a lot more of this ridiculousness from all companies. They all have to bow their knee to the ESG score that will be implemented in the future. If you don't have the proper score, you won't be able to do business, especially worldwide. Meanwhile, in Davos, our self-appointed "betters" flew out in private jets, ate their weight in meat, and took their pick of the "escorts" that flock there for the event.
