OH this is fabulous that almost all of it is from food storage. I love eggplant and it makes us think we actually had meat when we make an eggplant casserole. Please keep taking care of yourself and your Handsome Paul!

I am so hungry now. I'm a latecomer 2 enjoying eggplant at all, and even later to appreciating eggplant parmesan. I really enjoyed this video, because you showed how to make a meal from almost all dried ingredients. I've backed off on dehydrating the last year, and in general since Market ended for me, this is inspiring me to get back on that horse! The only thing I resist about this dish is the amount of cheese, which of course is melted, and I've been somewhat trained to believe that melted cheese is not very digestible. In fact, I have definitely had issues when eating what I thought later was excessive melted cheese. So the amount of cheese you put in here was daunting! You mention Keto , that keto for you does mean that cheese is good in high quantities. A friend of mine makes eggplant Parmesan as a signature dish for potlucks, and that's how I got turned around and realized I really love this dish. He was able to get eggplant cutlets Frozen and already breaded from Aldi's, but when I looked I couldn't find them and I checked other grocery stores and could not find them anywhere. So I am going to try the dehydration as you have showed me here.

I've got eggplant seedlings growing under lights & was just thinking yesterday that I don't even know what to make with eggplant, LOL! This is perfect timing. I really appreciate this recipe! I've never heard of using pork rind skins instead of bread crumbs - WOW that's got to be good! I have a couple of questions: 1)Do you remove the skin of the eggplant before cooking & dehydrating? 2)How old is your father? He sounds spry, raising chickens. Hope I'm like that until the end of my days. God bless him! Thanks again!

Hi! Yes, I peel the eggplants. The skin will get tough. I'm glad you are growing some, I think you will enjoy them! Some years they do great for me, some years not! Ha! When they come into the stores, I will try to remember to make a video showing how I dry them. My dad is 84, still works full time as a construction welder, and work is his only hobby, he always has something going. He has been blessed with good health and does not take any medicine. He's a great example of ignoring age and keeping on! I'm with you, I hope we can all keep going right up until the end. He's a blessing in our family, and we are lucky to have him. :-) Tina
