In case anyone needs the recipe written out: Ferrero Rocher Cake by Chetna Makan Ingredients For the cake 250 g unsalted butter, softened 250 g sugar 50 g dark chocolate, melted 5 large eggs 200 g self-raising flour 50 g cocoa powder 1 tsp baking powder 2 tbl whole milk For the ganache 375 g dark chocolate, roughly chopped 450 mL heavy cream 30 g unsalted butter For the buttercream 300 g salted butter 600 g powdered sugar, sifted 2 tbl whole milk 3-4 tbl ground hazelnuts For assembly Roasted, chopped hazelnuts 50 g dark chocolate 150 mL heavy cream Ferrero Rocher candies Directions For the cake Preheat oven to 180 C (350 F). Grease and line 4 8-inch round cake tins. Cream together butter and sugar. Add melted chocolate and mix. Add eggs. Sift in flour, cocoa powder, and baking powder and mix. Add milk and whisk for a minute. Divide batter evenly into prepared tins. Bake for 20 minutes. For the ganache While cakes are baking, make ganache. Heat cream and pour over chocolate. Let sit for a minute. Stir gently to combine. Add butter and stir to melt in. Set aside to cool. For the buttercream Beat butter until creamy. Add powdered sugar in two batches while mixing on low. Add milk. Mix in hazelnuts. Assemble Level chocolate cake layers. Top first cake layer with chocolate ganache and sprinkle with chopped hazelnuts. Continue layering remaining layers like this except top layer. Handle cake layers gently to avoid breaking as they’re quite delicate. Refrigerate stacked layers for 15 minutes to set ganache. Cover top and sides of cake with hazelnut buttercream. Refrigerate for 30 minutes to set. Make the second ganache and drizzle over top. Sprinkle more hazelnuts on top in center and place Ferrero Rochers around the edge.

Recipe for the Ferrero Rocher cake: Ingredient list: 250 g unsalted butter 300g salted butter 250g caster sugar 475g dark chocolate 5 large eggs 200g self raising flour 50g cocoa powder 1tsp baking powder 4 tbsp whole milk 400ml double cream 600g icing sugar 3-4 tbsp of ground hazelnuts Chopped roasted hazelnuts For the sponge: 1. Mix 250 g unsalted butter + 250g caster sugar and beat until its creamy . 2. Add 50g of melted dark chocolate and beat 3. Add 5 large eggs which you whisk I a bowl first. Leave mixer on and slowly add eggs to it. Then sieve in 200g of self raising flour and add 50 g of cocoa powder and 1 teaspoon of baking powder. Sieve into egg mix. 4. Mix for a minute then add 2 tablespoon of whole milk to it. Let it mix. 5. Separate evenly across 4 lined baking trays and bake for 20 minutes. For ganache: 1. 375g of dark chocolate roughly chopped. 2. 450ml of double cream, needs to be heated up to a boil. 3. Pour hot cream over chocolate and leave for a minute before we start stirring it. 4. Gently blend together 5. Add 30g of unsalted butter chopped in cubes. 6. Cover with clingfilm and leave to cool. For Buttercream: 1. 300grams of salted butter. Beat it for 2 mins until its nice and creamy. 2. Reduce speed of mixer. Add 300g of icing sugar and let it mix. 3. Then add the other half of icing sugar (300g). 4. Add 2 tbsp of whole milk. 5. Add ground hazelnuts, 3-4 tbsps. 6. Final mix of all the ingredients in the mixer for 2 mins. For the finale ganache which covers the top layer: 1. 50g of dark chocolate roughly chopped + 150ml of double cream. Bring to a boil. To assemble: Level the 4 sponges. 1. Put the chocolate ganache between the layers + sprinkle chopped, roasted hazelnuts . Repeat for every layer of sponge. 2. Leave in the fridge for 15 minutes to set the ganache. 3. Cover the cake with the buttercream. Spread it evenly across the top and sides. Used a scraper to remove excess buttercream. 4. Set in the fridge for half an hour again. 5. Drizzle the runny ganache over the top and push to the sides for the drip effect. 6. Sprinkle chopped roasted hazelnuts in the middle. 7. Finish by adding 12 Ferrero rochers around the outer edge of the cake.

Hi Chetna, after watching british bakeoff I have become a great fan of your bakes. I am planning to try this recipe soon for a friends birthday, I just have few questions, 1.When you put the cake in the fridge to set, do you cover the cake or you can leave it open? 2. If you are baking the cake for a party next day and you preparing the cake a little ahead of time, how do you store the cake? in the fridge covered or you can leave on the counter top for couple hours? i feel always confused on how to store the cake before the party! You dont need to cover the cake when you put it in the fridge. You can store it in the fridge not covered. And remove from the fridge an hour or so before you want to eat it! Hope your friend will enjoy the cake!

Dark chocolate is 70% cocoa and you can make self raising flour by adding 1 tsp of baking powder to 100 gms of plain flour!

Hi, I have just made this and followed the recipe very carefully. However my buttercream is not as thick as yours, it runs down and doesn't look like how's yours does, like I can't scrape the end he's to make it nice and round. What can I do? Extremely sad :( that it hasn't turned out as good as yours. Pls help anyone. This seems to happen to me quiet often with my buttercream and I don't don't what I do wrong. Xx

The cake is very moist and soft and yes will crumble a bit but if you are careful you can do it neatly. Should work in one tin.

So once made cover with cling film and leave it in the fridge till Thursday. Get it out of the fridge 2-3 hours before serving.
