When went Vegan, 18 years ago, I thought my diet will be more restricted than before. It was the opposite, due to that decision I'm including hundreds of new dishes and foods to my plate. 4 months ago I was diagnosed with Celiac disease too. Pizza is a very important part of my life (and I have Neapolitan origins) so I tough it was the end of it. I was wrong again, now I'm experimenting with buckwheat, teff, sorghum, millet, corn, chickpea, quinoa, amaranth, different type of rice, arrowroot, tubers... And the list keeps growing every week! Caputo GF mix, refined starches, and other pre-pack mixes work more or less good, and could be time savers. But using whole "grain" flours and fiber coming from different plants it's definitive a great thing to heal the already damaged gut of a celiac person, and it's adding a whole new dimension of flavors and textures. Plus, those work much better with sourdough than traditional Neapolitan dough. I would love to see more videos in that direction!

Thank you for sharing your story, I really appreciate it! We’ve always tried to experiment when it comes to the food we make. We will definitely work on using different grains and flours for breads and doughs. With my diagnosis happening so recently, we used the Caputo GF as it’s quick and easy. Even though we love pizza as well, we’re also planning on sharing different whole food plant based recipes beyond pizza as well. Thx again for watching and sharing!
