So helpful to actually see the techniques! I have a quick question. I have trouble with the transfer of these doughs from the proving basket to the Dutch oven. I get a really excellent rise and shape in the basket, but as soon as I tip it out onto parchment and/or transfer it to the dutch oven, it releases all of the gas from it. My bread is still fine and tasty, but it isn't that high, though I do get a bit of a rise when I bake it. Even on bread that doesn't require the transfer and have their final proof on the baking tray like rolls - when I apply a milk/egg wash it totally deflates them, no matter how gentle I am. What am I doing wrong?

Hi Eliza! Thank you so much for the comment! I would recommend kneading your dough for a little bit longer (or do more stretch and folds if that’s what your recipe calls for). That will help develop the gluten, and make your dough stronger! I hope this helps!! 🤗

Thank you Paige! I never kneaded bread before and really struggled with this recipe. Every time I tried it, I ended up just pushing gloopy batter around my counter which felt like mashing potatoes. But then I saw your video and realized that (1) I didn’t mix long enough (2) I didn’t put enough flour on the counter and (3) I was kneading too roughly. These are the little things that I just can’t figure out from a book. Thank you so much for making this video, I finally made my first kneaded loaf!

So in re-reading Bonnie’s book, I noticed that she does not use parchment paper when baking her bread. I noticed that you do. I always did also. Have you tried it without the paper? Just wondering if it makes a difference. Thanks!

JoJo InRancho I started out baking without the paper when I first started. It was just kind of tough for me to gently drop my dough into the Dutch oven because it’s scorching hot when you drop the dough in, so that’s where the parchment paper comes in handy for me! It also makes for easy cleanup 😉 I notice if I don’t straighten out my parchment when the dough is in the Dutch oven, I end up with kind of wavy edges around the loaf. It was a little more uniform and round when I didn’t use the parchment paper, but that’s the only difference I’ve noticed! I hope this helps!! 🤗

I really like the book but being a complete amateur to bread making and being in England where we have the added confusion of strong bread flour it's great to work with the video and the book. It has given me a lot more confidence and consequently I produced my best loaf - can wait to try the next video👍🏻👍🏻

We have been baking/following Bonnie O'hara's book as well! We seem to be struggling with ingredients.... we have been weighing them out but often times our dough is super dry and we need to add water. We also have a hard time activating the yeast with the temperature calculation in the book! Your videos have been super helpful for us as we have been referencing them as we bake.

Hmmm, I haven’t ever had to add water to my dough but I have seen videos where bakers have recommended adding it if needed! I had trouble with my yeast when I started baking too, but I think I was mostly overthinking it. I just get it bubbly and add the ingredients as instructed and the bread always turns out okay! Sanjay Shetty I would recommend adding a little more flour to your dough as you are kneading it. Just adding a little bit at a time. I hope this helps!! 🤞

I just started the recipe and accidentally made the full recipe for 2 loaves. What can I do with the second half of the dough if I only have one Dutch oven? Should I just throw it away?

Hi Margaret, thanks for the comment! You can always bake it after your first loaf. It might be a little over proofed but it should taste fine! You can also allow it to fully proof and then pop it in the fridge while it’s still in the proofing basket & bake it tomorrow! I hope this helps!

Anak Jalanan Hello Anak! The first few times I made this recipe I had some trouble getting a good result as well! Just a few things I can think of that may have caused this...as far as the bread being hard, over kneading and/or adding too much flour when kneading could have caused this. Over time, I’ve learned to get used to the sticky dough and I try not to add too much flour when I’m kneading. As far as the loaf coming out flat, I would think this had something to do with the shaping. The best advice I can give is to keep practicing! You’ll get better results each time you bake! 😉 I hope this helps!!

IMHO.. kinda sucks to do a bread recipe video and to tell people... " buy my book if you want the whole recipe". Obviously you have your recipes in your book, but it's uncool not too include the one in your video.
