Bumbi, can u talk more about the curry plant. Ive heard they are a difficult plant to keep. Do u over winter it in your home. I believe u live in Canada, i live in Newfoundland wherw sunshine is unfortunately a rarity in winter, fall and spring.

I live in eastern part of USA and it snows during winter so I bring the curry plant indoors before frost sets in and it goes out again when all the dangers of frost are gone in late spring. I keep it near a window indoors during winter so that it gets little light.

I first discard their stems, wash them thoroughly, pat them dry and then freeze them in ziplock bags. Whenever I want to add them, I add them frozen right from the freezer to the pan. Sometimes I chop them (frozen) or add them whole in curries and gravies.

I wash the green chillies and pat them dry and spread them out on a towel to dry them further. Then I discard all the stalks, pack them in ziplock bags and freeze them. I do not thaw them before using. I take out from freezer and immediately chop them and add in gravy or while cooking. I even add them whole in frozen form. They get mushy anyways in the gravy.

Not at all. I’ve been always freezing green chillies. Discard the stems, wash them well, pat them dry and lay them out for sometime. Freeze them in ziplock bags. Do not thaw before using. Chop them frozen and add them immediately to pan. You can also add them whole to any curry or gravy. I always use frozen green chillies during winter.

Oh no, sorry about that. You can add some maple syrup/honey/sugar. You can fry some more potatoes and combine with the rest. You can also add some cream

Curry Powder is a mixture of spices. It is not a staple ingredient in Indian cooking and is not used in traditional Indian cooking. It is rather an invention of the British to make one single fragrant blend of spice powder instead of adding each spice powder separately. For Indian cooking each household has their own recipe for adding spices. Some curries may just have coriander powder others may just have cumin powder or may be both or a curry may need an addition of coriander, cumin and fennel, the options are endless. I rely on curry powders if I am cooking something very quick and it is indeed very convenient when you want to jazz up a delicious dish in less time. Bumbi did you know that you can cook and eat the chilli pepper leaves? They are only mildly spicy, like mild mustard greens - cook like chard leaves. They are often used in Filipino stews with coconut milk.

If you look up Ginataang recipes (Filipino stews with coconut milk and chilli leaves) you can get an idea of how they're used, and I think in China and Korea they're stir fried like choy sum or other Asian greens. Personally I love leafy greens in stews or curries so use them in ginataang or sinigang (Filipino stew with broth and often a sour ingredient like green papaya or tamarind).
