Maybe it is better to cook the rice first before putting the purslane because i think it is more good if the purslane is half cook or blant.

It also has many different colored flowers. I grow in in hanging pots on my balcony. It's also good raw in a salad. The flowers are also edible.

Great recipe. In the American Southwest and Mexico we call it Verdolagas. They're delicious sautéed with onion and garlic then scrambled with eggs. We eat them out of the pan or in delicious tacos!

Thanks for the great childhood memories..........my grandmother (RIP) used to cook this when i was a child. I haven't eaten it in over 50 years since we migrated to another country where you just could not find it..... we used to also put it in salads with tomatoes, onion cucumber and other greens with an olive oil/vinegar or lemon dressing with a sprinkle of oregano and some fetta cheese.

You're welcome. Very unfortunate it's not as cultivated as cucumber and tomatoes. I only see them very rarely in specialty fruits and vegetable stores. Best source is your backyard during June July, in August they then to get hard.

Glystrida, (portulaca, purslane) is called so in Greek, because of its slippery nature when dressed in a salad. An old saying about someone who talks too much....."oh my God, he must have been eating Glystrida all day. You guys really started something here.......you prompted me to go looking for it. How i will go in the Southern Hemisphere? God knows. Meanwhile i will do my best to find a very old Greek recipe for pickling purslane....very enjoyable shared with friends and a glass or two of OUZO. I will post it for you here If i can, but i will try!!

yummy purslane, can't wait till spring again, I have them in my garden. I plant dill also. I made salad, and I mix it with onion,dill, lemon, olive oil and a dash of salt n pepper. I also if you want to add a little fish sauce(too salty). Serve it w/rice and your favorite fish fry. Add tomatoes also.

Unless you are making a soup. Purslane don’t need any water to cook. It’s loaded with water and best option is to sautae with some garlic and onion.

Not a soup, rather a moist main or side dish. Can serve it with some sour cream on top. Rice basically absorbs all the water.

I have a suggestion... as you know cooking vegetables for a long time destroys vitamins and other components. I would cook the rice first and then prepare purslane and mix them and maybe just maybe let them cook for a few minutes so the rice can absorb the purslane flavors.

Hi, sour cream and fresh herbs. You can also use Greek yogurt. I like grating garlic in either sour cream or Greek yogurt. Herb; you can use garlic chive, cilantro, mint, pretty much anything you like.

No, it has yellow flowers. However, the ornamental purslane grown for it's large colorful flowers are multicolor. But I am not aware if it can be consumed.

This is a main dish not a side dish. You have your vegetables (purslane, onion...) rice is your source of carbohydrates. You can also add sour cream when serving. This make it a complete and healthy main dish. When you add the rice you reduce the heat and let simmer which prevents overcooking. If you like it crunchy then as a salad is best option.

This weed is a soil creeper of Arid zone, found in desert area of India -Haryana, Rajasthan & Punjab. It has salty sour taste and is called *Loonak* (लूणक).

If purslane is slimy, it wasn't cooked long enough. It's best when it's raw or cooked thoroughly.

Ideally you want to consume the plant before it flowers. However if you missed that then yes you can remove the seeds. But if you do not mind consuming them, then just cook with it as the seed are tiny.

You can steam or eat it uncooked. I will make a video of purslane salad eventually. The steam should always be consumed unless the plant has been in the garden for a while and the stem became very fibrous.
