To clarify something about cooking temperature: Roast the jalapeños, onions and garlic at 400 degrees. I showed a different temperature on a visual note. Check on the ingredients half way through, rotate the dish if desired. Remove the garlic if it is getting too dark.

Looks great, Logan :-). I also got a great deal and invested in an air fryer exactly for these kinds of things. Didn’t even have to bother with preheating; just chucked all the vegetables In the basket and they were nicely charged within 20 minutes and ready to go. If you can afford it, I’d highly recommend getting one, they’re terrific :-)

Got it. But you should try fire roasting the jalas and removing the burnt skins, it keeps it from getting butter and adds a smokey flavor. Good recipe tho

Amazing. Question: how can we extend the shelf life of this sauce? To, lets say, 1 year no refrigeration..?

If you add something acidic to the sauce, say vinegar or citric acid to bring the pH to around 3.4 to 3.7...technically it could be shelf stable. I don't go into how to make sauces shelf stable in my videos. I tend to refrigerate my sauces regardless of the pH. I have my fermented habanero and blueberry hot sauce that I did a video on last November and it is still good....a year and a month later.

I am hoping you give it a go with these other types of sauces since it is better to conservate or to travel with such stable sauces. Anyway, your channel is true gold, and we all thank you so much.
