Really love your videos. If the carrots are organic I don’t even take skins off. That’s where the good stuff is. Your recipes are so flavorful!

Another yummy stew to add to my repertoire! I feel very guilty as these are so easy to prepare and taste so delicious. I just love the cannellini bean strew so I'm sure this is just as delicious. Thanks Ella:)

Love this Ella, just curious, why don't you clean-wash your mushrooms? Are they organic, or already cleaned?

I wondered the same thing about the mushrooms but I just assumed that she pre-washed everything. shrugs ☺

+Tamara Kristic i almost neverrr wash any produce i use unless it is clearly covered in dirt. especially if you are going to be cooking them - whats the harm in a lil dirt? i find not "over cleaning" things actually helps my immune system! this is referring to organic produce though, it is obviously different if you need to wash of chemicals/anything like that!

+Ella Weed even organic products may have some chemicals and pesticides, only in smaller amounts. Well I rinse my mushrooms just a little bit and scrape the dirt with knife. i don't know whoose dirty hands already touched them, haha

+Ella Weed... I almost always use organic produce. I just do a basic soak in water and vinegar... and I'm good to go.

Do you know much about the phytates in brown rice? They hinder iron absorption massively :/ I have low iron levels and am vegan, should I eat white rice instead do you reckon?

+prowseify Hi - I just thought I'd add my two cents in here. As a Nutritionist (and a vegan one at that) I'd always recommend wholegrain rice over white rice for a number of reasons : It is a rich source of selenium, manganese, B vitamins and fibre - plus, it is an excellent slow-release grain and it has a low glycemic load. Conversely, white rice has the majority of it's nutritional value stripped out when it is processed and, while it's a good source of carbohydrate energy (ideal for people undertaking vigorous exercise etc.) it is still highly inferior in terms of nutritional benefits to wholegrain rice. But, ultimately it is your choice to make :). You are correct about phytates within rice, these have been shown to inhibit absorption from minerals such as iron, zinc, calcium and maganese and vitamin D. See study: jn.nutrition.org/content/133/9/2973S.full Nonetheless, I would still recommend wholegrains but in moderate amounts. As a society we are focused on reductionist ways of thought - 'A causes B which leads to C' in this case, Wholegrain rice causes iron deficiency which causes anemia. This is a flaw in our thinking. We must be holistic, and see the bigger picture and accept that ALL food has flaws, and we must therefore enjoy a balanced plant based, whole foods diet. That way we will 'make up', so to speak, for any inhibited absorption. I would suggest consuming lots of delicious sweet potatoes, fresh fruits, vegetables and wholegrains every now and again. Most of all, lots of greens such as kale, spinach, broccoli and lettuce to ensure optimium iron intake. All the best!

+prowseify Hi! I´guess I´ll give you an answer too :) Phytates are not only in brown rice but also in legumes. What many people don´t know, is that a high intake of phytates are actually related to less bone fracture in women, so many researchers lately are questioning its "bad" reputation. Concerning its potential hindering effect on other minerals´s absorption, you can combine phytate-containing foods (grains/legumes) with garlic or onions (dry, fresh, whatever...) since these enhance the absorption of the minerals to even twice as much. I would also recommend you to combine rich iron foods (legumes, broccoli...) with high Vit. C foods (peppers, potatoes, sweet potatoes...) Hope this helps! :) (By the way, I´m studying a master in nutrition :) )

+prowseify another great way to rid grains/legumes of phytates is through soaking and/or sprouting them. i am vegan and have had issues with iron too, i would highly suggest you do research about soaking and sprouting, it really makes a huge difference! (i also have a video on this topic ifff you are interested, but also just google it!)

Anyone else find this ridiculously hot? I made this the other day following the recipe exactly and think there is way too much chilli for me to eat it, I've tried putting yoghurt/lemon/sugar in to cool it down but the heat is almost unbearable! It's a shame because I think it would be a great recipe otherwise.

This is way too hot--and I can handle lots of heat usually. It may be something that was lost in translation as this girl appears to be British and I'm not. Here, "ground chili" refers to ground chili peppers such as ground cayenne pepper, which is, typically ridiculously hot. Maybe she meant chili powder, which (at least here) is a spice blend and generally much milder as the ground chili pepper in it is basically diluted with a bunch of other spices. I was pretty disappointed as I used almost all of what was left of my mom's organically grown carrots from this year. I couldn't find a way to cool it down besides adding more of all of the other ingredients and it was already a large recipe... which means we have a ton of it frozen now (and it's still unpleasantly hot despite all of this).

So much unnecessary wastage on this recipe! 1) there's no need to peal the carots, the peal is full of vitamins and minerals, plus, it saves time in the kitchen, which is a bonus! 2) Don't throw away the coriander stalks, they are full of flavour, and nutrition, why would you want to put them in the bin? This is just bad a bad example of cooking!

Thats what you are lead to believe by watching more famous energetic chefs who conduct real tv shows. Her energy has nothing to do with the love she puts into the food she makes.
