s is the Laplace domain variable. You don't determine it in this example. You treat it just as if it were x, in any other function. What s represents in reality, is the complex frequency of the input function. It could be a sine wave where it is purely imaginary, or an exponential enveloped sine wave, where it is a mixture of real and imaginary. Or another family of functions entirely, in which case it is a superposition of multiple s-values.
