Fathima baji, I am giving you this answer from the point of an Eastern traditional culinary aficionado about the use of masalas. I am also going to give you some medical knowledge, so this is going to be a very long message, it took me about 20 minutes to dictate it, but this is for all of those, who have the patience to want to know more about the use of spices, herbs, and also medicines. For millenniums, the use of spices in the East was always used in cuisine, to make any food Food. delicious, because this tropical area was the land of herbs and spices. This is where traders came from the West to get spices which were worth their weight in gold in Europe and non-Eastern countries. So for us, being used, to spices, we use them in our cuisine and in our traditional medicine, especially Indian, Japanese, Korean, Chinese, and also the ancient medicine of Persia and the Tigris Valley civilisation countries. This has always been the cradle of civilisation, while in the West, in medieval times, it is a well-known fact that the Bishop of York was considered to be a very learned person, because he had 18 books in his library, while past Constantinople, just one city Damascus had a library of 450,000 books! Naturally, the savage Westerners , being basically traders and shopkeepers, looking for quick profits wanted access to spices which were very precious to them. Now, whole masalas named khada masalas are so powerful, because of their essential oil, that they are always used in cooking, just so that they give their benefits, and then they are Removed before any other product like meat and vegetables are put into the Yakhni or Ghee. If they were ever served up, in a meal, they were never eaten. Repeat, a piece of masala - clove, peppercorn, cardamom, etc. that you find in your gravy is put there just to show you that the host is prosperous enough to afford these masalas, are never put in your mouth, and chewed and swallowed. That is the most harmful thing you can do to your digestive system. But we have the habit of doing that, because nobody has taught this culinary rule to us. Well, please pass this on, any whole masalas need to be put away by the side of your plate, when you are enjoying the delicious gravy/salan/biriyani etc. That is why we had Muslin potlis, in which the herbs and spices were wrapped and placed in the food, just during the Cooking process. Then the masalas were taken out, dried in the sun and used again and again and again. This is how ancient cooking was done in the East, and the Middle East, and other places where spices were used for flavor and for healing. Then came British times, when they suddenly found spices. And they began marketing a mixture of spices in Europe, calling it the garam masala. Garam masala actually is a traditional local mixture of native spices. You fry those spices in different proportions, depending on the weather - more cinnamon and pepper in the winter, more green cardamoms in the summer, but the British are just made up a agdam bagdam masala, of every available spice , available in the places in which they were posted, the Mumbai residency, the Calcutta residency, the Madras residency, and began marking it as curry powder in London. Veerasami , started this business, being a very clever Veeraswami, with his pickles, chutneys and curry masala powders, which his mother and grandmother would never make and preserve, because they roasted their spices fresh every day. Any mixture of spice, like panch phoran, garam masala, and now our ready-made masala powders are shortcuts. Any mixture of garam masala made in an Indian subcontinent kitchen was always SPRINKLED, ON THE TOP OF THE FOOD, BEFORE SERVING. Its main job was to give the taste of that special masala, just one pinch - chutki, which was enough for the whole dish. So I do not say anything when I see cooks putting half a spoonful of garam masala into the food, during the cooking process, because I know that that family is going to suffer from heartburn, acidity, indigestion, future ulcers, but they have got into the habit of adding garam masala to everything, because the recipe is on some cooking blog on the Internet, with super chef In his white cap telling them, half a spoonful of garam masala, half a spoonful of khara masala, fry your masala... And then come to us doctors, asking us why one is suffering from such horrible stomach problems, including heartburn. Allopathic doctors are not going to tell you, stop eating masalas, because they want to sell their poisonous toxic drugs to you. A hakim is immediately going to say' stop eating spices.' You never use more than one small pinch of masala combinations, four - five seeds of herbs and spices ever, definitely not half a teaspoon or 1 teaspoon, unless of course you are cooking 10 kg of rice, and are frying JIRA or any other spices! The spices in large quantities were done when food was cooked in large degchis on special occasions. So, please look at the method of cooking, and the ingredients in the very helpful videos of this channel. This is traditional healthiest cooking in its purest form, though I am trying to get people to stop using refined oil. [Oil manufactured in a refinery to lubricate machinery in the winter, until someone decided that let us freed us to the Americans as refined oil, cooking spray, canola, in 1970. In the same way, refined, manufactured iodized salt was made for industrial use, until somebody decided, let us feed it to the Janta Janardhan, if they die, what care we, we have got our profits! [Sodium]. And you grew weaker. But Dr. knows best. Unfortunately, the doctor is an allopathic medicine quack. His job is to sell brand Pharma poisonous chemically manufactured drugs to you, make profits and kill you off, instead of curing you. And that is why no allopathic Dr. is going to tell you - use your traditional methods of curing yourself, like hamdard, ayurveda chinese, japanese unani etc., which use only natural spices and herbs to cure you permanently. So I would humbly suggest if you are a real traditional cook, you are never going to use a 19th century marketing shortcut of a garam masala for spoiling the digestive system of the firanghis! Feed your children, traditional cooked food, never microwaved, because you do not want to kill them with cancer, do you? Forget about Western anpadh ganwaar their so-called scientific experimental chonchle to kill their generations off, as quickly as possible, including feeding their children with soymilk instead of real asli dairy milk. The children of course are never going to have any children, because soybean makes young boys sterile. So if you are feeding your son soyabean chaaps, nutri nuggets soya products today, because they are so easily available in the market as food substitutes, please stop doing that immediately. Soybeans are for girls. The male hormone in a boy is going to stop being produced, on eating soya. You are going to say that the Chinese and the Japanese eat soya tofu for so many centuries, but let me tell you, that this is given more to women and less to men. But they do not mind shipping soy products to Western countries, where children are not being born or are dying within one day of birth, even though this news is not being given out to the readers. That is because the mothers are being given experimental vaccines, and then not allowed to breast-feed, so the child does not get his meal of colostrum. That colostrum of course, which is necessary for the child to prevent it from getting jaundice within the next 12 hours and clearing up its system is collected by the nurses and sold in the market! This is how low the medical profession has gone, in the West. The child cannot get its meal of colostrum, the poisons in its body, which should have been thrown out during the first emptying of the stomach remains in the body, the child gets jaundice and dies. We are fortunate that in the East, and in many other countries all over the world mother's milk, and breast-feeding is still considered the best and safest traditional way to keep a child healthy.
