for the granita, I suggest this recipe, by weight: 1 part lemon juice; 2 parts sugar; 3 parts water. Bring to a boil water with sugar (along with the zest of all the lemons used - you need that flavor), and then cool it down. Add the lemon juice and freeze for an hour or so. For the creamiest granita, use an immersion blender to really break down the ice crystals and incorporate air.
