I made this when in my twenties, about 1974/5 ish and I have not had it since. I cannot remember anything except that I do not think my then wife at the time was terribly impressed with the washing up to do but yours seemed quite retrained. At the obvious commendation of the official Keef Cooks Taster and senior Manager I may try this again. Need to get some Kidney though it is Steak and Kidney thingies time of year so: Thank you.

Meant as a joke, no doubt, but I finally gave in to the chopping board colour police a few months ago, so now I make sure I use the blood-smeared red board whenever I chop raw saladdy stuff now. Bwuhahaha!

A wonderful meal. I actually enjoy it best in the evening. Personally, I never cut the kidneys in half. Also, a dusting of flour. The gristly bit really isn't a problem. They've got to be fairly rare- that bit of bloodiness soaking into the toast is a much nicer treat than it sounds! I;m glad people don't like Offal- it keeps it cheap for those of us who like it!

I just ate free-range Venison kidney for the first time and they`re beautiful,smaller than these ones too..I got them from the Knepp Estate Rewilding place in Sussex....75p each

Not only is he the only KZbinr I have seen that can pronounce Worcestershire correctly, but he also has the correct brand. Hendo's for the win. My only change to the recipe is to add mushrooms instead of some of the kidneys, it makes it a bit lighter on the stomach, or makes the kidneys go further. That and a bit of red wine and a dab of tomato paste.

What! What the F is Hendo's? Lea & Perrins is the Original Worcestershire Sauce. From Worcester. Since 1837. Not 1885. And where are the anchovies? Hendo's is some sort of "Relish", apparently. Not Sauce. And definitely not Worcestershire Sauce. You may prefer it - but that doesn't make it Worcestershire Sauce. I am loathe to say imitation - let's just say latecomer...

Actually I've never heard of Henderson's Relish, in spite of my Great Great Grandfather living In Attercliffe Cum Darnall from 1881 to 1901. I am very jealous, actually. My wife won't let me cook devilled kidneys, as the smell of them makes her throw up. I haven't tasted them for 20 years.

These (kidneys, kedgeree, kippers) are simply dying out. As recently as the 1980s they would appear in student cookbooks as 'budget' meals. Now that I have nephews and nieces at university, I know them well enough to realise that they are dishes that they simply will not eat. In a space of a generation, they have simply disappeared from most peoples' repertoire. My favourite ever dish comes from the Beetle & Wedge restaurant in Oxfordshire where they served a plate of kidneys, black pudding, sweetbreads in a cream & sherry sauce with a rosti. It was to die for (but it's easy to make at home).

These comments here. I love all offal (haha) and this is for sure something I'll try. The milk bath helps break down certain enzymes in the meat. Isn't neccessary but learned to do it when couldn't get my kiddos to eat them. I might get to the Mexican grocer and try this today. Will beef kidney work fine?

I'm a new subscriber, but have been watching your excellent videos for some time now. In relation to kidneys (see the comment on the earlier video for steak and kidney pudding), I agree that they should be soaked to get rid of that lingering 'peey' aftertaste. My ex-wife used to soak them in vinegar overnight.
