I love v Warner’s programmes , there should be more. His eats Scandinavia programmes are great. I love how he also loves and misses his dad just as I do mine. I relate a lot to him as regards that, food and food memories are love.

Curious about the long rest for the kidneys, which were anyway chopped small, and putting the bread in the oven? What colour were the kidneys in the middle, still pink or brown all the way through. For me, getting softness and succulence is key, what was the aim here in terms of doneness? Otherwise, a very enjoyable vid.

I cooked this last night for dinner, and substituted sherry for port, as that is what I had in the drinks cabinet.

The smell from the kidneys can be removed if you soak them in milk before cooking them.

I believe people don't like kidneys, is because if you don't prepare them correctly they smell and tasted like "pee"! Great video today!

Why not!? The aromatics & taste from the sherry is also lovely. His Fathers version with Cinzano/Vermouth also adds a herby flavour to the kidneys. As it burns off & reduces it adds a concentrated flavour bomb to the kidneys. Give it a try, absolutely lovely.
