DHUWAN DAHI PASANDAY WRITTEN RECIPE :
Ingredients :
Beef pasanday ½ kg
Raw papaya 2 tbsp
Crush ginger 1 tbsp
Salt 1 tsp
Brown onion crushed 3 tbsp
Poppy seeds roasted and ground 1 tbsp
Whole red chilies roasted and ground 10
Coriander seeds roasted and grind 1 tbsp
Cumin seeds roasted and grind 1 tbsp
Black pepper crushed 1 tsp
Allspice 1 tsp
Nutmeg grounded ¼ tsp
Garlic crushed 1 tsp
Yogurt 1 cup
Oil ¼ cup
Ingredients to Give Dum :
Yogurt ¾ cups
Salt a pinch
Green chilies chopped 2
Onion cut in rings 1
Smoked coal 1 piece
METHOD :
Marinate pasanday with all the given ingredients, and leave it for 1 hour. Heat oil, add pasanday, leave it on low flame till tender, remove in a dish, top with beaten yogurt, onion rings, coriander and mint leaves, green chilies, give dum of coal.
LACHHAYDAAR KHEER WRITTEN RECIPE :
Ingredients :
Milk 2 kg
Almonds 4 tbsp
Rabri ½ kg
Small cardamom 4
Boiled rice 1 cup
Sugar ¾ cup
Screw pine few drops
Silver paper for garnish
METHOD :
Boil milk with cardamom until 1 cup is reduced, add in bowl, rice, let it simmer for 20 mins, add in grinded almonds, add sugar, cook till kheer thick, mix rabri with half cup milk, add to the kheer, lastly add kewra essence, slightly, remove in a serving bowl, garnish with silver paper.
