this is a very untraditional shabu shabu place. broccoli and kale? it should be shungiku= chrysanthemum greens =tong hao, and no rice. noodles are supposed to go in last. but it sure looks good! thank you!

Rice is ABSOLUTELY served in Shabu Shabu! You swirl the meat, dip it into sauce, and then rest it on the rice, allowing it to cool and flavor the rice at the same time.

Mike, noooooo!!! You seriously needed Dan for this one... Japanese food is similar to Shanghainese in that you're meant to enjoy the quality and freshness of the ingredients. the meat is not meant to be put in the soup to simmer. its meant to be dipped for a few seconds till it just turns slightly cooked (that's why its thin) and transferred to the ponzu to enjoy the freshness of the meat. so what you had in the end was not shabu shabu. It's kind of like the general tso's chicken version of Japanese food since you transformed it to fit your northern Chinese palate. As I've mentioned in your Korean posts, you should have a Korean friend join you for Korean places and Japanese friend join you for Japanese. to put it in perspective its like a person from the Midwest going to China to try char siu but because it was too sweet for their taste and not deep fried enough that they put it in a deep fried after applying batter and making a hotdish with it.

this is also why all you can eat places for these things is a waste of time unless your sole purpose is to fill yourself up. if it doesn't make you full, why not stop by in between meals to get an indulgence of a "snack"?

You've gotten me addicted to Hotpot. The sad thing is, the closest one to me is in Pooler Ga. which is over 6 hours away :( We followed some of your tips on eating hotpot and we enjoyed everything we tried, including the wood ear mushrooms and the tofu skins (and we aren't fans of the tofu!). It was awesome!

Shabu shabu ingredients are added in the hotpot in a sequence and eaten in a particular sequence. Also, you are supposed to move the meat in the hotpot just till it browns- perhaps a few seconds. Not a few minutes. The udon goes in at the end.

I made a hotpot for myself and my girlfriend on New Year's Eve. Today I took the leftover broth, added in some extra beef stock, and had already thrown in the remaining raw meat from the skewers. The oils and flavors from the soup base are going to make an AMAZING fried rice later tonight. I cooked Jasmine rice in the soup broth after straining out the ginger and lotus root.

Love you videos! Always fun and delicous.Though I have to note this is not an authentic Shabu Shabu place. It's more like a Asian fusion Shabu, with heavy Chinese (hot pot) and southeast Aisan influence, which explains the strong flavoring (hot pot) and Citrus/lemon undertone (Thai, Indonesian, etc.).The orignials impression of Shabu Shabu you described in the beginning of the video is actually pretty accurate - exactly how the authentic Shabu Shabu you find in Japan tasts like. So maybe consider change the title since it is a little misleading?

I do my own shabu shabu at home so I get all I can eat, my hubby and I bought our own hot pot (with divider) and meat slicer. we go buy high quality meat like wagu and bison and just cut it thin ourselves!

You know, there are actually lots of types of Chinese hotpot depending on the region you go to. Even the Chinese diaspora have their own distinct styles like Singapore and Thai styles. Singapore style tends to be lighter flavoured. Of those I have tried, Thai Chinese style is my favourite, I am spice lover myself. You should try it if you have the chance...check out Koka Restaurant. They even have branches in Singapore.

Japanese food is designed to always be eaten with rice. ALWAYS. Everything is very strongly flavoured, so it mixes well with the plain rice.

I tried to convince my mom to go to eat shabu shabu once. She asked me what it was, and I told her, and she goes "No! Why would anybody go to a restaurant where you have to cook your own food? The whole point of going to a restaurant is to eat somebody ELSE'S cooking." So we just made it at home instead.

I live in AZ and I know we seriously lack all you can eat anything (with the exception of your run of the mill Chinese buffet) but I've been to Japan and know there are actually all you can eat shabu shabu out there. :)

My first Shabu Shabu experience was in San Francisco back in 2009 or so. It was an all you can eat place. It's on Clement. I think it's called Shabu House. I was told they used Kobe beef.

you're in LA, so the kale is almost a given! growing up I only ever had hotpot at home, and my parents made it with water only, and the sauce was just soy sauce and a raw egg. I don't think I knew the proper way to eat hot pot until I was an adult!

I hate when people complain about the correct ways to eat stuff. It may not be traditional, but it's not wrong. As long as the food goes into your stomach and then intestines, I don't think there's a wrong way to eat. That being said, dumping everything into the broth at the same time is an easy way to overcook everything. He could like overcooked food though, it's whatever.

Mike have you ever had Nabe? I think you would like Nabe cause it always has a flavored broth, unlike Shabu Shabu which is always water. Also, I am currently living in Japan and there is an all you can eat Shabu Shabu/Nabe restaurant near me. So, I know you were just in Japan, but you need to come back for the all you can eat!

I don't know Mike I think the quality of the hot pot and the greasiness depends where You're eating it. When my family makes it we try to make sure the broth is not too greasy and that our ingredients are fresh.

From my memory, traditionally shabu shabu is enjoyed dipping and cooking one piece of meat/veggies at a time into the pot. Not sure if adding all the ingredients contaminants the flavors, but he enjoyed it, so most likely irrelevant. The Japanese eat slowly and enjoy every bite.

Japanese version of Chinese Hot Pot would be Nabe. various types of broths: miso, shoyu, pirikara. shabu shabu is just seasoned water.

Hi Mike i am Japanese living NewZealand. anyway, where did you go? when I saw in the pot never never crabs, and chill and soy sauce color soup. Shabu Shabu came from Chinese hot pot . In Japan using hot water with Konbu(Kelp) some place just water. I think you went to wrong restaurant again. koji

Koji Mizuki There are different broths in shabu shabu restaurants. Mike went to this place pick the one that has crab and is spicy, nothing wrong with the restaurant. Honestly, here in SoCal, if Japanese shabu shabu places only have simple broth like you mentioned, it maybe nice initially, but most of them will be closed long ago. We Californians have picky taste buds. I heard they have milk broth in Japan and later copied in Taiwan. Wonder how that taste like.

Tony C I think it's cream, not milk. And it's FANTASTIC. Best one I ever had was chicken broth with cream, seasoned pork, spicy peppers, kale, onions, and potatoes. Adding the cream/milk to the dish gives it a wonderful hearty flavor. You cook everything, then add the cream at the very end after all the other ingredients have nearly finished cooking. It's definitely not authentic Japanese style, but it's one of those foods that's so delicious it's addictive.
