This is excellent. Refika of Refika's Kitchen makes something similar but I think she also adds halloumi and maybe some other stuff - hers is very overloaded. I think your "bread" needs za'atar and sumac and maybe preserved lemon paste. But rest assured, it's perfect as is.

A regular pan will work. Just make sure to grease it and line it with parchment paper for an easy release. Enjoy!
