Unfortunately as a professional line cook that statement is not completely true. As with anything in cooking your ingredients and their quality dictates your end results. Their are plenty of high quality lemon juice brands that are for more then just cleaning.

@@nathanarbuckle3180 A line cook isn’t exactly a chef, sorry. No chef would use anything but fresh lemons. It does make a huge difference, regardless of the quality of the bottled stuff. It’s not that hard to cut and squeeze a few lemons. The quality of a dish depends on the quality of the ingredients.

Dimitra I have to tell you how grateful I am for posting this recipe. I haven’t had homemade avgolemeno since my mother has been battling Alzheimer’s. I have been cooking the Greek dishes I love so much as a kid. I made it like a yiayia. I needed this to feel better and realize how much I missed my mothers cooking. Thank you again.

You need to beat the egg white like a merang on sugar then add the egg yoke beat to combine then add lemon juice and some if the hot stock to temper the eggs before adding to the soup and cooked rice then its fluffy and creamy😊 salt and pepper to taste

Hi. I would like to know if you wash the chicken before putting it to boil? Cause some say not to wash it any more cause when washing in sink, n’activant spread. And my second question is the rice. Now they usually say to wash rice in cold water before cooking it. Do you do these 2 steps? Thx much.

My mom would make avgolemono everytime we were sick and sometimes when we had leftover chicken. Our recipe is more like congee where it's just rice, chicken, the eggwhites and yolks and salt and pepper. Either way the softness of the chicken and rice is amazing but the lemon is really what shines in avgolemono.

This needs a hell of a lot more likes. Adding lemon for fresh flavour and using eggs to bind a soup is well underappreciated. My ex-girlfriend (who is Greek) left behind some amazing recipes and tips. Like how to make fresh easy pita bread for gyros (and adding the right vegetables for flavour!), that you need to squeeze cucumber for intenser, not-watery flavour of your tzaziki, use fresh herbs as vegetables (fresh dille especially!), bake oyster mushrooms like you'd do with a decent steak to eliminate meat to your diet, or how to prepare complete animal product so to not waste any product, like what you'd do with eastern goat stew. And above all, without spending a lot of time in the kitchen to make everything taste heavinly. Greek cuisine is cooking made easy and fun, pragmatic, but still by using all kinds of fresh ingredients. Absolutely love it. This soup is well within my top three of recipes, so thanks for sharing your tips! I used the second and "to-the-go"-version of avgolemono soup before, but now I'm definitely trying the second version with seperated eggs!

My yiayia made wonderful avgolemono! She taught me to separate the eggs, whip the white to stiff peaks, fold in the yolks and lemon juice before tempering. It makes a rich but light, almost sensuous texture. Have you ever had it that way? She always used orzo, like you!

Neither of my Yiayias' added carrots to the final presentation... They did, however, use a "mirapoua" when making the broth ... Recently I started adding Quinoa to the orzo -- it thickens up the soup nicely... Let me know if you try it (FYI... I also add it to my Giourvalakia)

Looks good. I appreciate that you say that this is your way of making it. We don’t bother to separate the yokes and whites and we don’t put carrots in either but we have always had really thick soup from the standard recipe. Each island 🏝 does make it a little different but it is a very traditional Greek soup.

The soup looks amazing, I want to make it for my friday birthday party and as I am going to have little time on that day, I wanted to do most of teh recipie the day before and I was wondering - at which step should I stop on thursday? Or can I do the whole recipe on thursday and just heat it for the guests on friday? Will the orzo be ovecooked then?

I realize that this was written 10 months ago, so maybe this advice will work for this coming birthday celebration. When I am not serving all at once, I make my carb (orzo, rice, whatever you use) separately and add it on to the portion I’m heating up on the day of serving. It’s an incredibly easy and delicious soup! Happy early and/belated birthday! 🎂

I really like the recipe. The only things I would suggest is to slow down the pace of your narration and take a little breath in between sentences...it's an exhausting pace to listen to and I had to keep rewinding. Not that relaxing to listen to - but still, lovely recipe. Thank you!

This is well explained. I make this one a lot. But I don’t put the meat in to boil because it becomes too tough. For me anyway. You did a great job on this. People are very intimidated by Avgolemono, but, once you get the hang of it, it gets easy. :)
