This is amazing -- I had this soup from a restaurant purely by accident and had no idea how it was made. I hate egg drop soup so if I'd known it was made with eggs before I tasted it I would have missed out on an amazing soup! I'm definitely going to try this recipe! :-)

I live on soup (literally because I have trouble breaking down food in my stomach) this is going to be a nice change from my home made chicken soup! I ALWAYS have home made chicken stock in my fridge because I drink a couple cups of it everyday. I love adding lemon juice to my broth and soup at the end for freshness!

Fabulous Soup! I did it twice last week. It is going to be a regular dish for me. By the way I loved the taste after reheating. I didn`t really mind that the orzo was a bit mushy. I didn`t know the taste of chicken and lemon and Dill and Egg/cornstarch ... great!

Looks Great. I like how you use just the yolks. You could get pepper in and get the heat by just using whole peppercorns in the initial stage when you are making the stock and then you can remove them.

I'm going to make this tonight, thinkin to slice lemons and add them to the broth rather than juice after, I love cooked lemon. Also I love adding ginger to any broth to give it more warmth and spice. It will be like lemon and ginger tea. Also u left out chilli flakes! ;)

Good with chicken even better with lamb neck chops although you need to coo[refridgerate]l the stock to remove the fat. My mothers recipe is different. We use only 2 whole eggs and no corn flour and the meat is served seperately.I also use any small pasta as well as rice.When mixing the egg and lemon I use an eggbeater,when it froths I add the stock very slowly at first and after the first couple of ladles you can go faster.When adding the egg,lemon,stock back to the pot you need to make a smooching sound with your lips otherwise your soup will not turn out good. Once all ingredients are combined turn the stove off and let it rest for 5 minutes before serving. I also like lots of lemon,some people don't,so I keep some lemon aside to add to taste seperately. Fresh lemon is best but I have used the stuff out of the plastic bottle when the lemons were expensive and it was still good. Keep up the good work

Very nice! I’m wondering if glutinous rice is used rather than orzo, it would thicken the soup the soup without adding a thickener like cornstarch? But I do love me some orzo! Thanks for sharing! ☮️🖖🏽

Just made this, and it was awesome, thank you! I've already made some of your other Greek recipes! I have noticed that some Greeks when making this soup, separate the egg whites from the yolks, then beat the whites into peaks before beating in the yolks with the whites. Have you or any of your Greek relatives done that, and do you think that would make the soup even creamier?

I've never done that. I'm pretty satisfied with the creaminess of this soup. Give it a try. I never needed that extra step, I just used the leftover egg whites in an omelet the next day :)

Have you ever tried freezing this? It seems like it would be one of those wonderful things you'd love to have in the freezer for those times when you feel like you're starting to catch a cold or when the weather turns cold. I heard you mention "the restaurant." I'm just south of Houston in Galveston County. Where can I go to get some of this scrumptious food?

I don't think this freezes well.. Never tried it, but with the egg and pasta, I wouldn't freeze it.. You could keep lots of chicken stock in the freezer and even boil and shred the chicken, and freeze it. Then it comes together rather quickly... Our restaurant is in Spring: Euro Bakery & Cafe :)

Other recipes don't mention removing the egg white. Maybe this is why I can never get the soup to thicken properly? Also, is it okay to make rice separately (can't eat orzo due to gluten). Lastly, is there a more creamy version that is really yellow? I used to go to a diner and have been trying to replicate that recipe.

I've made this both with and without corn starch and with or without the egg whites. I can't seem to tell the difference between using just the yolks or the whole egg. What have you found in your experience?

I like the little bit of added creaminess that the cornstarch adds. I've never used egg whites.

That's my problem too. It does tend to get mushy the next day. Sometimes I just doctor it up by adding a bit more chicken stock and some fresh orzo. Just a little bit.

Couldn’t one pass the soup through a sieve the next day? Then ad fresh orzo and put the peaces of chicken back in the soup and boil it for a few minutes until the orzo is ready.

It depends on the rice. Basmati rice takes about 15-20 minutes to cook. Just follow the package directions. I prefer short grain rice in this soup like a risotto rice.

Could you make pastichio w/o tomato sauce. My grandmother made it without tomato sauce. She used to make the lemon cream soup with tiny meat balls and orzones.

Please don't use corn starch or any flour. Just a quick blitz with the bar mix or potato masher. And no dill. As a Romanian /Australian i love dill but not in the Avgo-lemono.

*My grandmother was born and raised in Greece as was my father. This is NOTHING like how my grandmother made Avgolemono soup, not even close. Her methodology is all wrong. Do not add cornstarch and don't temper your eggs by dumping ladles full of HOT soup into 8 eggs (too many eggs). I have a feeling this cook is NOT Greek. The fact at the end of the video she mispronounces "PITA" tells me she's not Greek. Greeks do not pronounce their bread "pita", it's pronounced "PEEE-ta.*
