One of my brothers called Worche..Wister...he called it : What's this here sauce. Always a good addition to a beef recipe. An old time trick is slightly softened butter of a walnut size, and work flour into it with your fingers. Drop in your stew broth and stir it to thicken said broth. Nothing like a good stew. I have one stew recipe that is actually baked in the oven on low heat. Hat tip to Dirty Dan for sharing his recipe with you Santee and to you for sharing it.

Good Morning from sunny Southern California. That's pretty much the stew I grew up on & raised my family on. The only change I'd make is adding a bay leaf (or bay laurel which I think might be native to California.) We've been fortunate enough to have a bay laurel in our yard most of our lives & my hubby calls it a "beef stew bush." If cookie forgets to remove it prior to putting the stew on the table we always tell the diners to check their bowl for the "prize." Love your channel.

Made with a roux and a variety of proteins , chicken, andouille (a heavily smoked pork sausage), or seafood like crabs, shrimp etc and sometimes adding “fillet” (ground sassafras- refer to Hank Williams Sr, famous line in his lyrics to Jambalaya “Jambalaya, crawfish pie, fillet gumbo…..” Every culture had their soups and stews with various proteins and veggies. Really sounds like a good meal on a cold day. "what´s in the pantry" as ingredient list makes shopping easy. Szews are are fine meal. they improve with getting kept hot or reheated. Also stews do not require compöicated cooking techniques - dice, put into pot, put on the fire, leave alone until done.

A trick for tomato paste-open one end, leaving the can end in place then flip and open the other end, removing it, hold it over the pot with open end down, pushing the remaining can end through like a plunger-it all comes out nice, easy and complete, take the remaining end off and you have a nice cylinder of tomato, and a cleanly empty can.

The way this economy is going, stews will become an important staple of people's diets - easy to make and very tolerant of variations (IOW, use whatcha have on hand or can get cheaply). When I was young, my dad would make huge pots of vegetable soup (it was closer to a stew in consistency) and freeze most of it for later consumption. It was the kind of meal you never really got tired of eating.

Obviously, he makes the stew different nowadays but I'm curious as to how others make and eat their Brunswick stew.
