If you love cheese and cream and butter and would like them all on the same pasta - then this is your dish! 'Raviole' are not ravioli, but cigar shaped gnocchi, and they are a speciality of the Alpine valleys bordering France in north west Italy. They use a special fresh cheese called Tomino di Melle in the dough. And as an extra bonus, Domenca's husband Toni makes a cheese layered polenta.
Raviole are special occasion fare: they were traditionally served at engagement parties and baptisms.

Who gives a thumbs down to the Pasta Grannies?! I’ll just imagine it was a slip of the thumb. What a lovely group of people. I could watch them all day. Going to make gnocchi today for the first time, and will try (as close as I can get to) their version soon.

I love the elegance of their movements as they shape the pasta. I can imagine how much practice it took to master it. These are the kinds of things we need to be teaching kids. Food is so satisfying when you have prepared it this way.

Love,love,love,pasta grannies!! My Grpa was from northern Italy , his sister was born on the boat to America. Married my Swedish Grma, and she learned to cook authentic Italian from her father in law who barely spoke English. ( the polenta episode is exactly as my Grpa made it from my childhood). My grma taught me to cook, and In turn I taught my 4 boys to cook. I have a recipe that came from the mountain region my Grma told me for north Italian meat sauce. I’m hooked on this channel, thank you so much Vicky for keeping these beautiful traditions alive.

I never knew we have polenta ('mamaliga' in Romanian) in common, my grandparents were cooking it in the same way but what was an astonishing similitude is the cutting of polenta wich my grandma did it in the very same way. Blessings!

Romans use to prepare polenta with other grains before corn (mais) was discovered. They must have passed down the recipe to Romanians. Italians and Romanians have so many things in common!

I have polenta in a box in my cupboard. Besides frying it, I didn't know what else to do with it. I guess you can serve it with any sauce or gravy. Nom nom!!

@@sandrajohnson9926 polenta and cheese is tradition, especially with fried butter, but you can toast cold polenta in a large pan and match it with hot meat or even better with mushrooms... endless possibilities

Gazillion calories in that delicious meal, but those red cheeks from breathing the fresh and cool mountain air... love their kitchen tools; shovel used to mash the potatoes, the wood burning stove, two sided stirring spoon. love Gorgonzola, those beautiful happy cows and that beautiful dog ... I'm moving in with them.

This is ultimate indulgence, decadence, and comfort food all in one. Imagine growing up with this your whole life. That would be like heaven on earth! hi Cheryl, I do - and enjoy it very much. I wouldn't recommend eating pasta 3 times a day though (which is what happens when I do the film trips) as I spend the next 3 weeks attempting to lose the weight I've put on! best wishes, Vicky

Looks absolutely delicious, and since i am irish, butter and cream in a recipe is right up my alley. Other than baked goods which normally must be very precise in measurements , i notice as i am getting older, i can measure out many ingredients with my hands, and can tell by feel if a recipe item needs more or less of an ingredient when combining, and that is a least one benefit to aging, lol, i can usually tell by touch if a meat product is cooked to its proper doneness without over cooking it. I love the pasta grannies and thank you Vicky for all the hard work you do in bringing us these recipes, God bless you and all of the pasta grannies and their families and friends

kckrye I was thinking the same thing while watching that as I'm in the states as well. But I also think that we eat so much processed food and so many sodas and sweets that the combination has to be horrible for us. I'm sure that they don't eat this every meal. They probably laid out a nice big spread for their guests. Either way it looks amazingly delicious.

This was/is food for the hard work on the farm. In former times they used this amounts of butter and cream because they really needed the calories for hard work.

kckrye I grew up on a farm, gnocchi were a poor mans meal, potatoes were always available, we used olive oil instead of butter,because we had lots of olive trees. But if you melt the butter and heat it till it’s nutty in colour, than throw a handful of washed and dried sage leaves, the leaves turn crispy and taste delicious served with the gnocchi

kckrye because they make it all by hand. It’s a workout. Was always told by my grandmother, if you make it from scratch you can eat whatever you want. And she was right. She cooked and ate like this until she was in her 90s.

There's a similar dish from the south of Germany, called "Schupfnudeln". Same ingredients and shape, but without the cheese. You make it along with Sauerkraut (of course 🙂 ).

I don't know. They are long, a lot thicker than spaghetti and rolled by hand so that they have different shapes.

I think you're thinking of umbricelli pasta? I've now googled spaetzle and funnily enough we filmed something called gnocchetti di Chiavenna where dough is dropped into boiling water to form uneven, fat strands of pasta, which seems very similar. However they are served with potatoes and drenched in butter, not fried. So not an exact match! best wishes, Vicky

Actually there is a 'sagra' every September for this gnocchi (google: sagra raviole Sampeyre); Domenica cooks for it, so if you are ever crossing the French/Italian border at that time of year .... :-) best wishes, Vicky

OMG!!..I am full just watching this video, that is one rich meal. I love gnocchi and polenta, it was once considered peasant food but now you pay an arm and a leg if you can find it in a good restaurant. Don't ever buy the packaged stuff in the markets, gnocchi should always be fresh or at least frozen fresh...who are all these morons giving Pasta Grannies thumbs down??...Its not a slip and your computer is turned upside down as one person suggested, its just simply your mean spirited..who could not love these little Italian women??

Mit Kartoffeln mit drinnen, so hab Ich Ravioli auch noch nicht gesehen. Liebe Grüße aus Deutschland, Ja in den den kleinen Ortschaften in Italien, wird noch sehr viel von Hand gemacht. Z. B. der Käse. Kenn das von früher als Ich zu Besuch in Italien war.

the plain raviole look and made like "schupfnudeln" in Austria. the polenta is made the same! 😃 there is a dish made with polenta, speck, hard cheese from the alps, eggs and even apples, called frigga. it was prepared by the hardworking "holzknechte" (wood cutter) on an open fire during while having a work break. eaten with homemade sourdough bread.

I could see some so called "health conscious" critic slamming these dishes because of all the butter, cheese, and cream, but all you have to do is look at these beautiful older people and see that this food has nourished them for a lifetime.
