Nadia shares her recipe for 'mandilli di saea' or silk handkerchiefs with pesto - a dish typical of the Genova area in Liguria. She not only makes her own pasta, she also makes her own flour - and the result is delicious! Nadia uses the 1 egg for every 100g of flour rule, but relies more on the feel of her dough rather than the actual measurements because hand-milled flour behaves differently to shop bought flour. If some of you want to follow Nadia down this road, Fidibus is a good make which you can find online.

I've been a fan for a long time, but this one take the prize. Growing all her own vegetables? Milling her own flour? Wood-burning stove? If it weren't for the pandemic, I'be checking plane fares and heading straight to her door!

I'm from there and believe me,they are fabulous!! Bought pesto is no relation to what this lady has made here. The experts will never use blenders for this as the heat from the blender and the consistency will change the final result.

I wish I can live like this, I barely go out of the house and fully introverted, to grow my own food and relax like this would be heaven, the life in a capital city is just so fast I cant keep up, making pastas on my own sounds relaxing

La fatica è tanta, ma anche la soddisfazione...ho vissuto in città fino alla pensione, e 15 anni fa mi sono presa una casa in campagna e mi sono messa a fare la contadina...sto ancora imparando!.

Bless. This grannie really has brought home cooking to the next level, I understand that they would grow their own vegetables, but to make her own flour as well?! Amazing! I can just imagine how lovely and cosy her home is with all this extra effort she puts in her cooking.

This is the first granny to use wholemeal flour, I think.

Contrary to what most western health gurus would tell you, wholemeal flour isn't a traditional thing in Italy at all. Virtually all other ladies presented by Pasta Grannies use traditional white flour or semolino. The elderly people who remember the WW2 time still curse the rough texture of the wholemeal flour used in those times when the "normal" flour wasn't available. I still remember back in 1990's how the grannies jabbered about their doc who told them to have " this wholemeal pasta which tastes like crap".

@@panuntukan Turkish cuisine is one of my favorites that many cultures were inspired by it/spent hours watching videos showing authentic recipes made by Turkish ninés, not modern day housewives from big cities; the amazing skills of rolling the yufka dough to paper thin without even having to lift it .... sometimes better then the Italian grannies; the food of the Sultans !

This video is in winter time. I bet her large amount of big and flashy basil doesn't come from her garden, but imported from a far country. Also the pine nuts aren't for sure from Italy, but from US or Turckey.

Stéphane .Muras we do produce a lot of pine nuts in Italy, not sure why you think otherwise. We do have many pine trees, especially in coastal areas such as Genova where Nadia comes from or the South, where I come from. As per the basil, not sure. Looks like a lot but there are ways to grow basil in winter too. Have a look at my channel if you're interested in Italian food! Ciaoooooo from the ITALIAN FOOD BOSS 💪🇮🇹

@@panuntukan In winter basil is produced in greenhouses, of which there is no dearth locally: the Genoese are very particular about buying local produce, as the flavour is completely different. Greenhouses may or may not be the most sustainable thing, agreed - but it's certainly not imported. And by the way, I suspect this lady - like most of us who are fortunate enough to grow their own - has a full stock of pesto in her freezer that she prepared in the summer. My guess is she wanted to show how to make pesto in this video, so she bought some fresh basil just for that purpose. As for pine seeds, the Italian ones are super expensive these days (winter or summer, no big difference); but again, it's one of the few things that a Genoese is most willing to pay for. You can tell Italian pine seeds from colour and size: I leave you to figure out how.

Si, Ale, una volta usava aggiungere il prezzemolo al pesto, o sostituirlo completamente nel periodo invernale, quando il basilico non veniva prodotto industrialmente nelle serre....ora non é più necessario, lo trovi anche a gennaio. Io sto a Pannesi, a 600 mt, e il mio basilico muore all'inizio di settembre...

I used to like pesto with green peas and red potatoes and pasta of course. We went into the San Fernando Valley coming from the Hollywood Hills and went to the Italian Deli for the good cheese. All the stuff you get at the grocery stores tastes like wood.

What do people normally eat with pesto-pasta? I made pesto-pasta, and served it with a shredded carrot salad, flavored and marinated with lemon juice/olive oil/salt/pepper. I also served homemade sundried tomatoes with it. By the way, everything looked amazing!

These Italian grannies soon will be obsolete. So very sad that young people prefer the crap sold in supermarkets just because it's convenient. It has no nutritional value whatsoever and too many added chemicals 😭😭

The word "mandili" who passed into the Ligurian language (in Italian handkerchief is said "fazzoletto") comes from Arabic. You find it also in Spanish and Turkish (mendil).
