I am from India and I am a huge huge fan of pasta grannies. Last Sunday I tried one of the recipe featured in Pasta grannies to make tagliatelle. I turned out very well. Pasta grannies is like a family to me

I’ve known Lidia since I was a newborn, let me tell you, she makes the best traditional dishes. She used to make me and all my cousins lunches and dinners every summer when our parents weren’t there, I’ve got so many amazing memories with her. She is like a grandma to us ❤️

One of today's comments said that the Pasta Grannies channel is like family. So true! I don't know if you realize how these special ladies have touched people's hearts in so many ways. It's not only about making traditional food, but about essential life connections that seem to be continually disconnected & eroding these days.This video reminds me of childhood, with every Sunday, visits to both paternal & maternal grandparents.The best times were around the kitchen table with grandparents, aunts & uncles gossiping & arguing. Nothing fancy as far as food--maybe a chicken dinner, or a pot of cabbage soup, or a simple snack of beer, sliced, dense rye bread & summertime grapes, or poppyseed pastry & a cold glass of milk, or a neverending big pot of tea & coffee cake, doughnuts or cookies. So many loved ones, (as well as the Sunday ritual gatherings), are long gone, & the rest of us scattered far & wide....On top of the wonderful pincinelle recipe, I love Lidia's sharp wit & humor---when she said that the monks liked eating everything, as long as they didn't have to cook it--& when Philipo said that the pincinelle was amazing, & Lidia says "Tell Them! I know it!!" Bravissima! to Pasta Grannies & feisty grandmothers everywhere. 😊

@@guguigugu I will explain for Jacob, because it can be quite dangerous for him to be critical of the governments surrounding Kurdish territory. Part of a genocide is destroying cultural touchstones and that includes cuisines. Because Kurds were (and are to a large extent) nomadic, they were able to discover and cultivate many different types of cuisines that they made unique to their traditions. When the surrounding countries (Syria, Iran, Iraq, and Turkey) attempted to assimilate the Kurds, they took away a lot of heritage foods in an attempt to make them forget their own cultural identity and become Iranian, Iraqi, Turkish, or Syrian, rather than fight for the territory they have inhabited for millennia.

I helped a couple of signore prepare a feast in a monastery in Piemonte a couple of years ago using all the lovely fresh produce the monks had grown. The boys kept popping into the kitchen with some message or delivery or other, but they were really just excuses to come and help with tasting.

This is fascinating, the use of bread dough. Good for when eggs are not available. I assume it can be run thru a pasta cutter if you are not so patient to do all that hand rolling!

Water. She used the same pitcher to add water to her flour when making the dough. It just keeps it from sticking to your hands without adding oils to outside of pasta which wouldn't be necessary. Kind of like, moistening your hands to roll meatballs.
