Elvira is one of the few women in the village of Amatrice who can make a pasta called gnocchi ricci. It was traditionally made for families who could afford to buy it from the sfogline - the pasta makers in the village. Elvira would like this pasta to be better known and made. Try it, if you fancy a challenge!
To make the doughs you need 350g 00 flour and 5 eggs; and 150 g 00 flour plus two egg measures of water, plus a pinch of salt. And lots of patience...
For the mutton stew: 1 onion, 2 sticks celery, 1 carrot, 3 tablespoons olive oil, around 600g mutton ribs, and 400g minced beef, 2 x 400g tins whole tomatoes, one teaspoon of salt, 100ml red wine.
