Lance was trained personally by Bobby Mueller putting him in very high distinction. He's worked in BBQ long before the rise in popularity and will still be tending fires long after its luster has faded. Massive respect to this man.

I met Lance at the beginning of the stiles he was cutting n serving and he cut me a big slice of the burnt end (my favorite) so that I could taste the rub n smoke and the difference and Stiles became my favorite bbq spot. I been born n raised n south east Austin I grew up on all the lockhart spots and elgin spots and stiles hands down was the best I ever had

In my country, they are selling authentic texas bbq rub. It is chilli and lime. Is this normal?

No. Classic Central Texas rub is almost always just salt and pepper. Other places will add things like garlic but its usually heavily salt and pepper based. Have never seen a lime in a Texas BBQ joint

Worked for the guys. They had cool concepts but treated their workers like absolute trash. A culture of severe alcoholism behind the scenes. Maybe one of the absolute worst places I've worked for and I've been at some awful jobs. Half of their locations are now commissary. They don't even cook on site. Spend your money elsewhere. There are far more deserving restaurants in Austin worthy of your hard earned dollar

Great BBQ. Wayne had incredible job in Houston in sports. Luckily he decided to return and help his father. Sister is capable but a flake. Half owner of la BBQ in Austin. And brother John who has been proclaimed by Texas Monthly to be some BBQ God was nothing more than a wino who ruined everything and business he touched. Drank himself to death at 59 few years ago.
