@@domini384 because that would give you shitty dough. This is not a mixer, its a kneading machine. Kneading stretches the gluten giving you a flexible springy dough. Normal dough forks will not do that, they will rapture the gluten constantly, giving you a more solid less springy dough.

It's surprisingly filling, not too dense, not too light, not too sweet, and they're generous on the candy, it's like a dream, but believe me, you can't eat more than quarter of it in one sitting, otherwise it spoiles the taste

I think they put the vanilla extract in some liquid to make it more potent, so it's uniform through the dough instead of making bitter pockets of flavor in some places but no vanilla flavor in others

So this Panettone was not made in Italy. You can see the North American electrical outlets on the wall where he is mixing the ingredients, also 30 seconds of googling and the white can at 0:44 confirms that this is in fact Montreal, Canada. Still cool seeing how it is made though.
