What is funny here is, she washed and sanitized her hands before handling and washing dirty dishes,but didn't wash her and sanitize hands before picking and packing the washed plates from the machine. What point does it make?🤷♀️

Covering the silverware with that tub will only clean the bottom of the silverware. Also, it’s a health violation to keep your dish racks on the ground. You need to buy a cart for your racks.

2 problems - when the 2 glasses were with the open side up they accumulated the wash water that is recycled water full of germs and dirt . the rinse stage didn't clean the glasses so when you just emptied the glasses you left all the germs in the glasses - I wouldn't drink from those glasses . second thing was putting the plastic container on top of the utensils- the wash arm send stream of hot water with detergent but they will never get to the utensils because you just shielded them with the container . another one was using the sensitizer hand soap that is NOT a food grade cleaner on food tools - very bad . what if there are residues from the senitiser on the utensils ? people should eat them ? really?

And that was the wrong metal silverware which doesn't really move around that much in the dishwasher anyways. When I was at Shake Shack they would just put a second dishwashing rack on top of the one that was holding parts to the ice cream machine that makes the Frozen Custard for milkshakes.

I just gave my first thumb down, in a YT video, because when you make so many mistakes in a training video, how can students learn it the proper way? I am sure, the person in this video has gotten some sort of knowledge, of how to handle dishes, but she needs to study it another time, to read about the fine details. Let's sum up now what went wrong. 1. There's no real need to wash hands prior to handle dirty dishes, but it is not forbidden to do so. What I found a little funny is the fact, that she said, after eating, using the toilet, you might have germs, yup that's true, but after using the toilet, washing your hands in the kitchen is a no go! You should wash them in the restroom sink, to keep germs away as far as possible from the kitchen. 2. Handsoap in a soakcontainer is a no go. It's meant to wash hands, and not dishes. It is best to use plain water or a special soaking detergent. IF it was dishsoap, then it's fine, but then, she washed her hands with it, and that's wrong. For hands, you use hand soap! 3. If you load plastic bowls in a dishwasher, make sure they can't get washed out of the basket, by placing them first, and having a plate rest against it, to hold it in place, OR you put them in a flat rack, with another rack on top of it. There also exist special down-pushers made of metal, to keep plastic utensils in place during washing. Another solution is, to modify the wash power, by intensifying the power of the upper sprayarm stronger, to push things down inside the rack, the lower wash pressure will minimize by this action! But good wash results still can be achieved by proper finetuning of your detergent dosingmachine. 4. If you put the silverware container on top of the silverware, the silverware won't get properly washed and have enough finalrinse water plus rinseaid to get sanitized at the end of the cycle. If you want to keep the silverware inside the basket, then put another silverware basket on top of it during washing. Better is, to modify the power of the sprayarms, as described in point 3. above. 5. The plastic glasses are too light to be washed, here also the power of the sprayarms are responsible for this, and so, they need to be modified. Or put a flatrack on top the glasses, to hold them in place, but this might increase breakage of glasses. When you empty glasses which are still full of water, this is not only final rinse water, but soapy water too, which is very dangerous, as the detergent remains inside the glasses and being drunk by your next customer. Rinse aid mostly is not poisonous, but it's still a chemical you want to avoid. (when I as an expert dish washer, go to a restaurant, and smell a glass before filling it, and I smell rinse aid, I'll complain!) 6. After the peg-rack has finished washing, you can see that the person is not an expert, at first, she pushes the rack from the inserting side, but an expert knows, you can't push it out at the other side, not furher than half of the rack! It is far more efficient to walk to the other end right away, and pull the rack out, but.... before doing so, you must sanitize your hands, and she doesn't do that in the video either. Or else, it has NO sense at all to wash dishes. What some dishwashers sometimes do, is, to press the clean rack out, with the next loaded rack, and pull it back in, before closing the door to wash it, but this is not advisable as the new rack touching the clean rack, will contaminate it. And like anyone else, here said too, the fallen out bowls are not clean either, after they fall out of the rack, and lay on the strainer basket in between the foodparticles. 7. When cleaning up, it's more efficient to rinse out the chocolatemilk of the uppershelf first, before you squeesy-off the bottomsurface, as it saves doing double work. Plus, only rinsing with plain water won't clean it, you must make use of hot water and cleaning detergent and a spounge to properly brush off all the surfaces, then rinsing it off, and then drying it with the squeesy and final drying with a clean towel. 8. After draining the machine, you should rinse out the tank, before filling it up again, as on the bottom of the tank, there always will be foam, grease and dirt particles left, which you don't want to have inside your new washwater. If you leave it like that overnight, after your shift, it will be rotten the next day, when you start the new shift. 9. Touching the glasses as less of possible because of finger prints, is true, but she did not speak about the germs on her fingers after cleaning up, and not washing her hands first. 10. she transports the glasses rack, and unload the glasses, this she shouldn't do, as the glasses are probably not thoroughly dry yet, the rack is specially designed to dry them by air properly. It is much better to make use of a special regal-trolley which can hold of the glasses rack in whole. Then it also reduces handling and breakage. 11. The students better don't ask her further more questions, after all these points that went wrong. I suggest those students to read these points, and when having questions, replying below, asking me or other experts here instead. Thanks, and I wish you good luck with your company.

Totally agree with you. I've been a kitchen porter for a while now and the woman in the video hasn't got a clue. The more you do the job you find which methods work and which don't. Where I work waiting staff can be a total nightmare as well. Some think they are being helpful when I'm on break by placing dirty items in the wrong baskets for me, and then I have to take everything out and rearrange the plates and bowls or have to re wash everything again. It's the same with the silverware and they overload the cutlery baskets. I keep telling them to leave it for me to do but they don't listen! None of them have got a clue as to how clean things should be! They don't realize that it takes a good kitchen porter to keep the kitchen functioning and reduces the number of complaints by customers about dirty silverware and plates ect. I am very passionate about my job!

Putting the box on the silverware prevents the washer from effectively washer the topside of the rack. Don't do it.

In my restaurant we struggled with keeping silverware shiny using this exact method. I hated the water spots and dull silverware so I started experimenting. I now soak all our silverware in Cascade, bought some real silverware racks so they dry really fast, and I require all employees to wear gloves when touching clean silverware. Yes my employees hate me but my silverware sparkles!

@@FEASTclass Hi Sara, I have just written a comment at the top, about your video, but after reading this, it let me think about a Dutch TV show, called Smaakpolitie (you can find videos of that on YT too, which always is very informative.) Unfortunately for you, it's all in Dutch. But this person Rob Geus, who is testing those kitchens, he once went to a cooking school, and things were not good there either, which means, it is needed to have well trained teachers first, to properly train the students after, or else the quality of the future kitchenstaff will decrease.

couple issues: 1) Glass racks or China Racks cannot be on the floor (period) 2) The plastic container she is using for the video is completed old and dirty. 3) You cannot empty the silverware container full of detergent and dirty water into the table dish machine, she must use the sink. 4)The trash compactor should be on the left side on the table not on the right side.

I've never seen a hand dryer in a kitchen before. I knew it was a possibility. I work in a school kitchen that has paper towels. Find the paper towels a lot quicker and my hands are nice and dry to easily get my gloves on. I'm kind of surprised they don't have a wall mounted soap dispenser somewhere. And kitchens are loud enough already you don't need someone making extra noise every time they dry their hands.

You should clean the glasses in a separate glass washing machine most bars have them. The water in the machine doesn't recycle until machine is cleaned at the end of shift or day.

That's only partly true what you're writing there. The final rinsewater will fall into the wash tank and will be mixed up with the wash water. The wash water will get cleaner that way. The detergent dosing machine will have to dose new detergent so that the amount inside the wash tank remains the same as before to keep properly wash and sanitize dishes. But a special glasses washer, is always better. But before putting milk and juice glasses into it, pre rinse them.

You're supposed to change the water every time glasses go though. Otherwise they will have spots.

thenewstuffsucks no you don’t. The rinse water is clean water straight from the city supply. There is a rinse aid added to remove spots and to help the water sheet off of them, it also helps them dry faster. Wash water is automatically changed in the tank every 5 or 6 cycles. There are 3 cycles. The first cycle is a prewash, the second an intermediate wash, and finally a high temp rinse, which sanitizes the dishes. The prewash and intermediate wash is reused every time a new rack is put in, and the high temp rinse is new water that comes from the city supply, gets heated, then goes over the dishes.

Most of these dishwashers can also accept rinse agent, basically a really large bottle of commercial Jet-Dry. When I worked at Shake Shack they were too cheap to buy it.

@@johnanders8861 That may only be the case for a conveyor or a household dishwasher. In my 30+ dishwashing carreer I have never seen this in a single tank dishwasher as seen in this video! Only the rinse water comes from a booster heater which is connected to the city supply.

Ashish Gupta it’s not that complicated. This is a crash course so she is trying to teach a lot of information in a short time. It’s all for health and safety. Detergent to break down soils and oils, and either a hot water Sanitizing rinse at 180-195F or a chemical sanitizer for low temp machines. Would you want to get a sickness from unclean dishes.

Knives don’t go up ! That’s a serous impalement hazard ! What if somebody tripped ? She did it all wrong! And the dishes don’t get loaded in that way they get loaded in vertically not horizontally! What’s wrong with you people? You don’t load the dishes in that way ! You load the knives handle up !!! And you load the dishes vertically ! It cleans them way easier ! I’ve been a dishwasher for four years and counting don’t tell me how to do dishes everybody does it differently as long as the dishes come out clean it doesn’t matter and you wash glasses and silverware twice !

I hate when the Dish Machine only fits one Rack. Rather 2 at the same time. It,s happen with me in the very Past. Very Aggravating. It gets to me so bad. It,s like I have 3 full racks for instant. Already to go in. And the Machine only runs 1 rack at a time. It,s Nerve Wracking!!!!! So not Funny. When i,m in a rush. Currently. where i work. Thank Goodness the Machine fits 2 Racks at the same time. So much Simpler.

Potwashers, most abused and disrespected of all kitchen staff, but when KP doesn't turn up for work and chefs have to cover that department they (chef's) hate it,so...treat your KP's better. A good reliable KP is hard to find and worth their weight in gold.

yea its like that at pei wei and pf changs do not eat the rice because they make the dish cook it and he has no time to do it right.. and immigrant women on the line call out from the comfort of their facebook page to move a 20 pound bucket of rice 10 feet down the line, your best bet if you really wanna do dish is to find a 5 table bistro where you drink cooking wine in between every load and then go on facebook yourself for the next 10 min

The worse video ever. I’m a kitchen Porter myself and what she demonstrated what wrong. For starters glasses mugs don’t go in the same machine as food equipment go and the other thing is you don’t need to wash your hands before as you’ll be cleaning constantly. This video is what not to do if you want to be a kitchen Porter.
