It would be a good idea to specify that when folding the neck band, it is WRONG sides together. This is important information foe beginners.

Yes you can! Use a zig-zag stitch to sew the seams instead of an overlocker ❤️

She didn’t use elastic. The fabric is a stretch fabric.

Yes there is no elastic in this pattern, just stretchy fabric ❤️ you can use jersey fabrics to make this!
