For blue add baking soda to the red cabbage while it's steeping in the water, this will change the PH and make it blue

I have problems with beetroot, if you dont cook the pasta it turns into purple in a few days, I dont know if baking soda could help 🤔

If you boil the cabbage you can use the water as it is for a bright purple, or if you add baking soda (or I think even a little bit of lemon will work) will change it into a cool green

You could make the colors by using a food processor and whatever kind of veggies if harder vegetables boil them first put in food processor puree them add Olive oil and garlic add to your basic pasta dough, just use less egg, softer veggies like spinach Blanche and squeeze out excess water, add to your pasta dough and done, you don't have to use a juicer , she's doing the easy way to show colors.

Since your trying tortellini, try using a mixture of shredded Parmigiano Reggiano, Gruyere, and Low Moisture Part Skim Mozzarella, instead of using Ricotta. It makes it more stringy and less starchy. If you feel like getting fancy, use the above cheeses and put into a bowl with a good handful of minced Italian flat parsley. Chop and caramelize a sweet onion with garlic powder (or crushed garlic, just be sure not to burn it), smoked paprika, and a pinch of salt. After your onion is fully caramelized, add it to your cheese and parsely mixture, then mix with a fork until easy to make into little scoops to put into your tortellini. Don't worry about your onion being too hot, it will help break the shredded cheese into smaller pieces that are easy to put into your tortellini.

Yes, fully dried out pasta can be kept up to 6 months. After that you have to use your senses to determine if they are still good.

Tienes que guardarlos en la heladera, tapados, o los podes congelar/freezar también. En la heladera te aguantan unos días, en el freezer 1 o 2 meses

Hope it's not too late. Try using a mix of whole wheat flour and semolina and add a tinge of cocoa powder to it. Do not add too much tho, or else it will have a bitter taste to it.

Let the knife do the work. Slice things instead of pushing the knife through the ingredient. It made me cringe thinking about the edge of the blade and the damage that sudden impact does to the blades cutting edge, which in turn leads to slippage and in turn again accidents where people get hurt. I’m sure I’m just over concerned. Otherwise a lovely video! Thank you! I learned a lot.

Emleila Emleila I thought semolina was used in many types of pasta. If I’m not mistaken, semolina is the coarse milled durum wheat. Durum wheat is known for the ingredient in most pasta if you don’t know. So if you had ever had pasta you see in the ordinary grocery store, I would say you have already known the taste.

There is no scientific reports on activated charcoal being beneficial when consume orally. It has no nutritious value nor has it been proven to help detox. I'd prefer squid ink pasta which is a more traditional way of getting the black colour, or just go and use black bean or black sesame.

I doubt the accuracy of the strength of some of these colours. Looks like they've added food colouring to it between cuts. Also a safety PSA: DO NOT EAT CHARCOAL WHILE TAKING ANY MEDICATION, INCLUDING ANTIBIOTICS & BIRTH CONTROL!

You can try it out and report back on the colour strength. We did not colour any of them with food colouring. What you see in the video is all natural, which if we really did add food colouring, why would we leave the purple and blue so pale? lmao. Cheers, have a great day tho~

Hang it dry on a rack and when it is 70% dried, gather it up and twist it into the bundle. Let it dry fully in that shape. Hope this helps~
