When I do a batch of peppers that I want to keep whole, I cut off the stem & cut up one side. I use scissors so it makes it easier

Bought a 4 gallons case of pickled jalapenos from Sam's. Left with a full gallon of peppers after draining, not the half like in glass jars. Dried them and put them in a doubled lunch bag to crush into a the fine powder and let the fine powder slide across the paper directly into the jar. Crush the larger pieces left in the bag. Be careful! You'll be surprised how little powder a gallon makes. (Great in mayo) A little goes a long way, Shared it with my spice-loving family!.

Yes, use a mask! I did a Bunch of small Asian peppers and ground them into a powder. That is when I realized, I created a weapon.

For this much cutting--fast time. Otherwise the slow time with chat. I can't wait for the Farmer's Market to open so I can dehydrate the summer long! I love peppers, and I hate filling my freezer with them.

Parchment paper did well, but I love the silicone mesh. It's so easy to fold and pour the dehydrated items.

I give tips in all the videos, I've got quite a few on the channel, and a whole post full of meals in a jar ideas. The thing is - just use them as you'd use fresh after you rehydrate INSIDE meals. So replace 1 Cup of fresh with 1/4C of dried . There's no magic to it, just lots of experimentation. www.thepurposefulpantry.com/best-meals-in-a-jar-recipes/

Ha ha. have to laugh because whenever i dry my hot peppers to make homemade flakes someone winds up getting 'gassed' and tearing up. Great way to clear out the sinuses.

I love making jalapeño powder! I made one jar last June and still have enough to get me through this June. I use it on pizza, in soup, or anything thing I want to add some heat to. Love it!!! A little goes a long way🔥❤️

I didnt watch this before I did my green chillies. Theyre hatch "medium" green chillies but theyre hot! For me. When I ground them i turned around when I took off the lid, but i found out that its in the air for awhile. So basically my sinuses got well cleaned out that day! It was ok because i dont have asthma or anything. ❤

A lot of YT channels skip the prep completely. They may show just one or two of an item, then stop the camera and come back when they're done. Many comments indicate people appreciate this. With how busy people are, doing a more bottom line approach is nice. I do appreciate your telling temperature you used, how long things might take to dry, and how much time it actually took. (I still have to slow the video down because of the rapid speech, which is hard to follow.)

@Grant Jones Assuming you're not talking about the first part of my *suggestion*, which Darcy asked us for our opinion about her method of presentation, excuse me for being handicapped so to speak. Some of us don't understand rapid speech. I've noticed speech has gotten faster and faster these days. As are the people ready to jump on other people for expressing an opinion. Of the hundreds of YT videos I watch, hers is the only one I have to slow down. Chill, dude. 🙂

I'm glad you mentioned the humidity and Texas. I live north of Austin and at some point my garlic will be ready to harvest. I want to dehydrate a lot of it but I think I should do that outside. You mentioned a storm system - so obviously I wouldn't dehydrate outdoors in a tornado watch or severe storm, etc. But if it is a clear sunny day but humidity of say 60%, is that ok? What level of humidity would be ok to dehydrate outdoors do you think? Thanks so much for your videos. I love them! I don't care if you cut fast or chat. I've seen some KZbinrs have the video go fast and then they voice over the video with any pertinent information. Thanks again!

Generally - it's best not to. It's not just the hotness, but flavor - your more delicate things may take on a peppery taste. If that doesn't matter to you - go for it. But it's usually recommended like things together. Fruits. Veg. Aromatics. Mushrooms. Proteins.

If you dehydrate the mix vegetable for long-term and you let them go extra time to make sure do you still have to condition them if you’re going to seal the jar for a long term

Greetings! We are in the super humid Deep South, and it's actually raining more as I write, but have jalapenos that need dehydrating. However, I don't dare do them indoors or I KNOW I'll have issues. Question: If I cut/prep them, and flash freeze them, do you think they would dehydrate OK on a 'dryer' day when I can put the dehydrator on my porch?

Hey Darcy! It’s green chili season here in NM… just bought 5 lbs of roasted chili’s. I’m freezing some but want to dehydrate the other part. I bought them in the frozen state already so - do I need to blanch before I dehydrate? Haven’t done that w/ the sweet peppers And this vid says you don’t need to blanch hot peppers. What is your advice?

I know this don't have nothing to do with what she's talking about washed new jars and Lids turned upside down to dry for two days set lid on top until I was ready to use they stunk rewashed rinsed and bleach how would I reclaim the lids so when I vacuum seal my stuff in jar so it don't stink I don't know if you do this or not but I can eat some help I'm new at this I'm new to your subscription thank you

They likely stunk because of trapped moisture. Just wash the jars again - shouldn't still smell. If you laid the lid bottom side down on the jar, the coating could have retained some smell. Washing everything again should be just fine. Just use them - they'll be fine after a second washing and at least towel drying before letting them fully dry.

Veggies he loves, broth, ramen noodles (or spaghetti noodles if we're out of his favorite ramen), boiled egg, whatever meat he might want or we have in the fridge. It's just a throw together with some spices.

Hi Darcy, have a question. I am in the process of dehydrating 3 cases of canned mushrooms with the end goal of making mushroom powder. I have two pints filled ¾ of the way full in the conditioning stage right now and the last batch went in today. It has been taking 17 hours to dehydrate, which means this last batch won't come out until tomorrow afternoon. How long can the mushrooms stay in the jars to condition. Are they good in the jars u til the last batch is done in order to powder them all at once? Also does 17 hrs seem normal to you. I ask because I purchased this excalibur USED. I am not familiar with the heating and times yet Thanks so very much

Hi, I dehydrated my peppers yesterday and it ran for 12 hours, then sat overnight, this morning they were still bendable, so I threw them out, could I have turned on my dehydrator again and let them dry longer?

Yes - why throw them out?! They aren't ruined, they just need time. And if you tested them while they were still warm, they won't test well. Let them cool 5 or 10 min before testing.

I have - I roast without oil, remove and cover to steam, remove the skin and dehydrate/powder. I personally don't like the charred skin, which is why I remove it.

I see I could can them, but I kinda want my jars for other things. And dehydrating takes so much less space. And I'm running low on paprika. Do they are not Hungarian. Big deal.

any airtight container. Commercial jars from the store, mylar bags, food storage containers

If the commercial jar is airtight it's all you need. You don't need to do anything else. If it's not airtight, an o2 absorber won't help.

You can a few times if it's not got much left on it that can't be wiped off. But juice entrenched paper isn't the safest food handling thing to put new food on.

In every box of shoes you ever bought. Silica is in everything that we buy. It’s a little white packet. I just save them and collect them and use them in my preps.

Not all silica is food-grade. You can buy it from Amazon or make your own.

Silica bits in a tea bag is much cheaper than the silica packets.

There is a cat litter that has plain silica that you can use. You can also get some lightweight cotton tea bags. They can also be put into the oven at a low temp to dry them out again for reuse.
