i've made meringue with a fork at my lowest kitchen utensil point as a student. the trick is: you have to let your wrist die a sad and unnatural death by circular rotation overload then revive it (with rest) only to kill it multiple more times and then finally use the other wrist when you can't bring yourself to revive the poor arm end anymore. Cry over (but not in - because you don't want salt in your meringues) and question the meaning of existence, realise your wrist just got a second (billionth) wind and go at it again. when you don't have an electric beater and just a hand whisk - invite your friends over (ply them with the meringue you are making) and have the bowl passed round so you have a constant rise and fall of wrist capabilities without massive casualty

Been there, but hand whipped cream. yeah. Never again, but I was desperate, it was late. But my great-grandma showed me how to make meringue with a hand whisk, and I refuse to do so again now that I know how much faster a mixer is haha

Cream of tartar helps the egg whites stay stiff. Superfine sugar works best, and the water bath needs to go up to about half way up the pan. You're kinda making a souffle cheese cake. Mix the eggs whites in 1/3 at a time the first 1/3 just mix it in like normal the other 2/3 fold in down the middle to the bottom of the bowl and up then turn the bowl. Stiff peaks with egg whites take a long time the biggest thing is to be patient and make sure they are stiff. When you lift the beaters up and the fall over they are not ready. When you mix the egg yolks with the creamcheese do it very slowly or the egg yolks will scramble. Rember get any egg yolk in your whites and they will never get stiff. This recipe is a bit picky but im sure you can get it.

Corrinne your peaks weren't stiff enough that's why your cheesecake wasn't airy enough to be as jiggly. Maybe using the flat wisks, rather than the round, in your hand mixer would make forming the peaks easier.

Hailey Jaenicke of course, I didnt say she did a bad job, she did great! It looked good and probably tasted great too! But she was dissapointed that it wasn't jiggly, but the reason they weren't very jiggly was the eggwhites. I was just giving her some tips on making those meringue peaks stiffer in case she tries to retry this recipe or needs stiff peaks for other recipes. It can really make a difference in a recipe!

the jiggle is caused from a fluffy aerated batter. the reason your cakes aren't "jiggling" is because you either A) didn't whisk the egg whites enough or they were too cold or B) didn't fold them into the batter enough. if the cake doesn't have enough air pockets in the batter, they won't jiggle.

The water is necessary. If you watch a professional bake something that calls for stiff peaks from your egg whites, they will be able to make a solid 6 inch peak and have it stay there. If she would have just had a little bit more patience she could have gotten a better "Jiggle" .

Watching you make the meringue reminded me of my late grandmother....she used to hand whisk meringue and swore it wasn't as much work as people claimed! My grandmother could whisk so fast that she usually could make it in less than 10 minutes. She tried to teach me and I to this day still can't do it. :)... Her arms were so powerful it was unreal!!

So i went to culinary school. Basically what went wrong is that you didnt get the egg whites to stiff peaks and the cream of tartar helps with that. also the water bath needs to completely cover all of the pan. lol Corinne, you bought a springform pan and took the cheesecake out like it was a normal pan. Especially how jiggly this cake is suppposed to be it will make getting it out of the pan easier. I love your videos and these are all things that recipes dont explain very well.

Hahaha I knew it was going south when I saw what a shallow water bath she was using and then the tin foil thing.. it only got worse from there. Lol I had hope for the second attempt until I saw those repeats and then saw how limp the peaks of the egg whites were. I knew then that it was going to be another fail. I'm glad someone else caught the things I did. Lol I laughed so hard when she flipped the pan to take out the cheesecake 😂 she specifically looked for spring-form pans, too. Hahaha

The reason why the cheesecake did not double in size is because of the egg whites not being stiff. They get stiff when there is more air in them which makes them lighter(which is why they can form the peaks in the first place). Anyway, I recommend getting to stiff peaks BEFORE adding the sugar, but make sure you add the sugar gradually. Dumping the sugar on to the meringue will deflate it. Btw, you can always bring a meringue back, but you just have to whip it more and more in order to incorporate the air that you are missing. Another tip for making the meringue is tempering the yolk mixture. Corinne added the yolks into the hot mixture, which might have curdled the egg and given her an uneven batter. In order to get best results, you want to avoid getting lumps in your batter. I think Corinne could have done it on her third try if she had researched a bit more. I still love threadbanger and their content so whatever. You go Corinne!

Corinne, you're usually so much better at baking then this! Don't give up! You need to try again! The problem was you had little bits of yoke in your egg whites and you couldn't make them form properly. Even a bowl with a bit of accidental oil in it can cause your egg whites to be limp. Also the cream of tartar is added to help make sturdier peaks. The fluffiness and jiggle of the cake is all caused by the perfect stiff peaks. Everything else is added for taste and stability. And there is usually bit more water when baking, so it comes higher and helps cook the cake better (the outer pan, or the tray should be much deeper)

Good try Corinne!! As long as it tastes good, it doesn't need to jiggle!! I did notice one thing that could be improved upon if you were to try again. The egg whites weren't whipped to their full peakness, if you will. When you slid the egg whites out of the bowl, it means it wasn't whipped enough or your egg whites were breaking down when you were adding it to the yolk mixture. When mixing egg whites, to a full peak, it should stick to the bowl when flipped upside down, at least in my experience. Good Luck next time!! Love your videos!!!

You need to re try this again. The pan for the water and the cheesecake go into need to be a little higher and wider and you used a shallow pan for that . That's why it didn't rise.

Hey Corinne. A heads up for double lining a springform cake pan. If you put the foil on the base before you lock the edge onto the base of the pan, it will create a seal itself when it locks onto the base. Easier than wrapping the externals of the pan afterward.

I made cloud bread (fluffy egg bread, google it) with farm fresh eggs from a neighbor and from store bough and it made a HUGE difference. They were both fridge cold when I used them.

Meringue was one of the most time consuming lessons my grandmother taught me. Glass or metal bowl is a must as mentioned in previous comments. However, if there is any oil on the beaters left over from anything you used previously or even a drop of egg yolk the tartar won't allow the egg whites to peak. The temperature of the egg whites isn't the issue so much. It took me over an hour to figure out how to make it right with my grandmother chuckling at me the whole time. Don't feel bad and try again!

I've tried this before. It took me 3 to 5 hours and my meringue was gorgeous! But I ended up with the same result as Corinne's first try (water in my cake and flat egg bread).

Meringues are fucking hard dude. It took me a long time to get it down well. You should have the egg whites in a perfectly clean metal bowl. The whites shouldn't have any yolk in them. Like at all. Also fold in the meringue in smaller batches. Just cut through to the bottom better and then fold it over slowly. You don't want to get rid of all the air you worked so hard to incorporate. I believe in you!!

I use plastic bowls all the time (since I move quite a lot I don't want to carry glass bowls, and I hate the sound of metal beater agaisnt metal bowls), my meringue always turn out good so I think it's just a matter of technique.

The mix definitely separated after baking... you can tell by the two layers... her folding and meringue peak needs major improvement.... I've done this Japanese cheesecake before and I've failed a few times and I'm still trying to perfect it....

I tried this same recipe, and it also didn't double in size. Apparently you're not supposed to open the oven door until it is cooled, otherwise it will deflate. Also, cream of tartar will help, even if the recipe doesn't call for it. It helps the egg whites to stay stiffer.

The meringue isn't whipping up properly because there are little bits of yolk in the egg whites; fats and oils are a meringue's enemy. Make sure to thoroughly clean the bowl and whisk with soapy water (or wipe it down with an acid like lemon juice) to get rid of any oils. The cream of tartar is there to help stabilize the meringue, but it's not really necessary.

When parts of the yolks end up in the whites, you can add a bit of lemon juice or vinegar. The acidity helps with stiffen out the whites.

Making future meringue, I'd recommend using a hand beater. It'll speed up the process a ton. The hand beater has a button and some holes in the bottom and it froths up the egg whites and it helps a ton.

Yeah, Also for it to cook evenly and delicately so it wont burn- You have to put it in a deep enough dish so the water comes about halfway up the spring-form pan.

Use the stand mixer to beat your egg whites, and make them slightly stiffer when beating them because by the time they are folded it will lighten up
