The reason they were flat and a little more on the rubbery side is the fact that you salted the meringue pre-bake. The sodium disrupts the bond and it flattens out more than it should you can always season it after it’s baked 😅, other than that maybe some cream of tar tar and it would have been perfect

roxanne410 not necessarily. They may just be fed a 100% layer pellet diet. With my chickens, when I would coop them up with only layer pellets the yolks looked lighter like store bought. But when I would let them out to free range their yolks would darken up considerably

You can tell how old eggs are by the roundness of the yolk. If the shape is more spherical, it's fresher. If it is more like a pancake, it is older. My English teacher in highschool raised chickens. The color has to do with what the chickens eat. The shell color has to do with the color of the chicken's ear if I remember correctly. These eggs don't look the freshest, but they certainly aren't old. That's just my input. I'm no expert personally.
