Is there a need to have fuse for both +ve and -ve and a 2-pole circuit breaker?

Why both fuses and a breaker? Also, 600V PV wire would be totally fine to use.

The fuse it for each string of panels and the breaker is for when the strings get paralleled for higher amperage. Does this help?

Seems overkill for 120 watts solar...60 volts is not alot of voltage....I fuse 1600watts of solar at 150 volts...with an 80 amp ANL fuse...with a disconnect and grounded lightning protection.

It maybe but I'm trying to follow code as close as I can for my area. You're a array sounds impressive I would look closer at your ANL fuse and the inrush current capability rating. 🍻
