When you are topstitching, are you using a ‘knit stitch’ (versus a straight stitch) on your machine?

I wonder, do you need to pre-wash this type of “sweatshirt” fabric before sewing to avoid any shrinking? Or it doesn’t really shrink after the wash?

It depends on the fiber content of your fabric - if it's natural like cotton, it's likely to shrink, so you can pre-wash before sewing. If it's polyester, then it's less likely to shrink.

This may sound silly but would this work if I made them for myself as I am a male and obviously with male anatomy, because usually male sweatpants have more give in the front crotch I know there is sewing patterns for male joggers but I can’t find any I like the fit of but yours I really like please forgive me if I don’t make sense

What’s that wood thing at the waistband?

This is a wooden pressing block called a Tailor’s Clapper, it draws moisture out of fabric after pressing, cools the fabric down, and imprints the desired shape into the fabric. If you don't have one yet I highly recommend one! I have a link to one in the description of this video :)
