To be honest with you you shouldn't worry too much about certain concerns in regards to mold, etc. I've been a professional Chef for over 35 years and anyone knows that you should not return the knife to the docking station without cleaning the knife first and drying it. The docking is for the comfort of having the knives handy and in place as one begins to work. The only comment I may add for the safety of its users (including yourself) is that when you apply the varnish/protection to the wood it should be food-grade. Other than that I think your cutting board is super cool, very ingenious and robust. Something I might use myself. Kudos...great job!

What an amazing unique chopping board you should PATENT it, I love it! & don't worry about the mould & water thing its natural natures wood, I've been chopping on wood for 55years and never seen mould and as for water it drys naturally as long as its airing. thanks for sharing your beautiful craft.

Nicely done! I agree with you about “mold or bacteria” in the knife slots. Antibacterial soap and air drying is enough. You are using the board for cooked food products. Don’t second guess your work! 👍🥃

Looks awesome, and time will tell how the knife slots hold up. Worse case scenario is you cut that end off and you have a 100% regular cutting board :)

I think the concerns with the knife slots are unfounded. My Caphalon Katana series kitchen knife set came with a wood knife block, as do most kitchen knife sets. There no drainage incorporated in it, nor is there any way to really clean the knife slots effectively. I've had it for 12 years, and I've never gotten food borne illness from my knives.

Having a knife set in a wooden knife block is one thing, having the knife block also attached to a cutting board, I think is what most of the people have a concern about.

Yeah, I guess I just don’t have that same concern. Never even considered that being an issue and I still don’t or I would not have made it. I even through a solution of sorts in the build to help negate the concerns of others but I guess it wasn’t enough. I’ve been using the heck out of the board and have seen no issues

This hard maple was just too much for my 15 amp saw to handle. By leaving the blade at just over half the hight of the board and flipping the board I could make repeatable cuts on multiple boards instead of raising and lowering the blade again with each board.

Wow. Never thought of that. I love end grain cutting boards and use the same planer. I’m sure you know but if you ever are worried about snipe or tear out, you can glue a 1” sacrificial pine board to each end front and back and it will snipe on those. And less chance of a bad tear out. Love your stuff and appreciate your info

The wood craft video that just came out this week said to never use spalted wood in a cutting board as it’s a fungus and is not at all food safe do you think it’s food safe?

Thats not something that I have ever heard. I seriously doubt that the little bit of spalting on the edge grain will hurt me but its something Ill look into for sure. Thank you!

@@PenaltyBoxWoodshop Mold growth, salmonella and god knows what else can easily take hold inside those grooves. Though executed beautifully- a terrible idea for kitchen hygiene. Don’t take it personal- you had no idea.
