Baked Cod and Butter Beans
Ingredients
olive oil 2 tbsp
onion 1, chopped
garlic 2 cloves, crushed
fennel seeds ½ tsp, crushed
tinned cherry tomatoes 400g tin
butter beans 400g tin, rinsed and drained
cod 2 chunky skinless loins
breadcrumbs 35g I used Pork rind Panko instead
rosemary chopped to make 1 tsp
I also add a bit of Basil for the win
parmesan 25g, finely grated
Method
STEP 1Heat 1 tbsp of the olive oil in an ovenproof frying pan. Cook the onion and garlic for 8 minutes until softened. Stir in the fennel seeds and cook for 1 minute. Add the cherry tomatoes and bring to a simmer. Cook for 15 minutes until slightly thickened. Stir in the butter beans and season.
STEP 2Heat the oven to 200C/fan 180C/gas 6. Sit the cod in the saucy beans. Mix together the breadcrumbs, rosemary and parmesan in a small bowl and season, then add the remaining olive oil and toss well. Sprinkle the breadcrumbs evenly over the fish and bake for 15 minutes until golden and the fish is cooked through.

Retired AK fishing guide here. Love your videos. Ben watching them all month as i go through chemo here in Seattle. Back in the day, NW guides who came up to Ak in the summer turned us on to spraying our king(chinook) plugs with wd40 and it worked beautifully. The company used a whale/tuna or some other saltwater fishoil in their ingredients. A few years back the company was sold and the ingredients were changed unfortunately removing the natural fish oil. Spraying plugs no longer worked. This however created a fury to locate the original manufacturers wd40 cans. Good luck finding one these days under 100 dollars. Keep the vids coming. Thanks again. Please bring back ol Ovens to do some cameos on your show.

Little trick that we use when you fillet fish your fish right before you cut it off at the tail just flip the fillet on to the skin side and cut off the meat. That way all skin stays attached to the fish throw aways.

For aioli. Try cooking a ton of whole garlic in olive oil on the lowest setting on your stove. Till it turns slightly golden. Cool the oil and use 50/50 garlic oil and a neutral oil. 2 egg yolks should be enough and add a tablespoon of ice water when you start to add the oil. Add oil till its thick. Cheers!

Once try out the sour cream garlic with fish. It's a hungarian/romanian sauce, basically it's sour cream, garlic, salt, olive oil, if you fancy, you can add apple cider vinegar, basil, green onion or dill. We usually eat with trout, grilled pork or beef.

When I was younger, my grandfather would take us out fishing using beef signu, you know the tough layer between the hide and flesh, anyways once our Bait had been out a few times without a catch we used to replace it with new bait and place the old bait in cod liver oil, then after we either caught a fish or had to rebait. We would load up on soaked cod liver oil bait and I tell you now that we caught more fish on recycled cod liver oil bait than fresh beef bait for catching walleye in saskatchewan Canada. We ended up soaking all off our bait in cod liver oil because apparently the oils travel farther in the water than beef, as far as I could ever understand. Even now I take a bottle of cod liver oil with me when I go fishing, it has proven very reliable in catching fish.... I wonder what the result would be to add the oil to lures as a manufactured scent to the lure.... hmmm hope Zach reads this message and tries it out. I would be very interested to see if it makes a difference!

Doing your own soft plastics and having them work, takes practice. My grandfather used to fish Tennessee reservoirs and make his own baits. He always said each lake had its own quirk about hand mades. Some lakes, you have to let the baits soak in whatever for a few weeks. Others, only one color would ever work and without flecks. Making your own baits takes a LOT OF NOTES, especially if you've decided to stick with it. (BTW try garlic and salt *in the mix* of the pour if you decide to go after striped bass with your own baits.)

Aioli is a mayonaise type condiment sort of infused with garlic, originated in France, but it was garlic emulsified with oil, no eggs or acid (lemon), more like a thick garlic sauce that resembles mayo.

WD-40 does work because it’s a fish oil base. Works well on catfish too. Also, when the worms and stuff get worn out to where you can’t use them, just melt them and make new worms. That’s the cool part about these, they’re reusable.
