When you fish for carp or sucker fish. Good for canning cause the bones get soft enough like anchovies or use the carp in soups or stews where the meat flakes off the bone.

Btw, little fish was not a creek chub. I'm not too entirely sure as well to what it was but looks like some sort of sucker to me. It may have been a fall fish? Chubs are also really good eating. When I was little, I'd go with my uncle down to the creeks to catch them and we'd bring back some to fry up whole and eat em like a chip. You can only do this is smaller ones. You can just eat the bones and everything.

When u are in flooded areas throw a 1/4 oz jig with a white grub it will save you a couple hours of tying baits because all fish eat the white grub. It will make a believer out of it I’ll tell you that much.
