Yeah but they are shooting black powder firearms, which for the most part fired HUGE very slow moving projectiles that absolutely mangled soft tissue. The splatter is excessive but the wounds themselves were that brutal.

Since the gun props do eject shell casings out, it's not impossible one landed by mistake on the hat and he just rolled with it and stayed in character. No clue if I'm right or not, but that's the kind of stuff that happen on the fly and are kept in the movie.

I used repeating rifles almost exclusively in Red Dead Redemption, and the scene towards the end just underscores why it was such a good weapon to have during those times

Tarantino certainly likes his splashy (literally) blood scenes. There's no way those spattering gobs of blood would instantly eject from a human body. It's like Tarantino said, "To hell with realism. This is entertainment. Put bags of stage blood under the clothes, and we'll blow them up!
