You don't remember Red Dragon because Silence of the Lambs was such a masterpiece that none of the other movies could hope to live up to it. Even Anthony Hopkins himself has said he only did them for the money and regrets them. It's not necessarily that they're bad movies, they do have some really good scenes, but it's like trying to make a sequel to the Lord of the Rings trilogy - how can you ever live up to it? You can't. With American Gangster, there are several masterpiece movies in that genre (Goodfellas, Godfather 1 and 2, etc.) whereas American Gangster is just "good." So it doesn't stick in the memory as much.
