I fish for catfish and ive caught monster catfish just as much as pan sized catfish. They're one of the most active fish when reeling in and when taken out of the water. That fish didn't move or do anything the whole time, despite the fact that those fish survive hours out of the water.

If a fish is fresh it should be stiff like that, if it's gone all floppy that means it's been there a while, if it was caught in the last 5 minutes it will be still kind of floppy but it will stiffen very quickly :)
