You should do a few more steps. Separate the wing from the small drumstick - kids love the mini drum. Separate the drumstick from the thigh - debone the thigh and pound it out - lay it out and layer with stuffing - role it up (roulade) and tie it - sear it and bake - slice into medallions. This is way better use of thigh and optimizes the cooking of the drumstick and the mini drumstick. Also - you should brine and air dry the turkey in the fridge overnight. Brown the carcass then make your stock.

I watch another video that did not rip apart the "Wings", she was cutting with more little cuts all around it and the wing simply detached without pulling it apart. Hmm.

I watched 5 videos and saw 3 different ways, a real chef wouldn't hack of the wings first
