Great recipe I soaked the eggplant in vinegar then pat them dry rub some olive oil on each of them Then I sprinkled, garlic powder, onion powder, turmeric powder,black pepper then light fry each side to get brown Then add the cheese I add tomatoes tasty

I know a better recipe using only one egg, one eggplant, no cheese required (unless you want it fancy. Tortang talong is simple, delicious, smokey and you don't hide the aubergine with loads of eggs and cheese. 😂

Tortang talong- roast an eggplant til all parts are charred. Cool and set aside. Beat an egg, season with salt and pepper ( you may add garlic powder or chili flakes if preferred). When egglant has cooled, peel the skin and mash with fork. Pour the beaten egg over it and fry 2 minutes each side.
