I don't know the chef; he could be an actual asshole for all I know, but both of those things are very true of most people. You can be humble and not like when you're told you're wrong. Being humble doesn't mean you can't have likes or dislikes, it just means you view yourself with modesty. Also, he's telling the contestant to be humble. This isn't a situation where the judge would need to be humble; in fact, its quite the opposite. The judge is not being outperformed by the contestant or facing something unexpected right now. His job right now is to judge a dish that is overcooked, and a chef that has tried to downplay the importance of the fact that its burned. This is when the chef has to tell him his dish isn't prepared correctly and the contestant needs to stay humble and listen.
