Making fluffy pancakes is much easier than it seems at first glance. Just need to follow a few simple rules.
1. Baking soda is mixed into the ready dough
2. The dough is prepared with WARM kefir
3. Knead it - fry it
4. Do not mix the ready dough
5. Fry on low heat with a lid
Proportions for pancakes
200 g kefir
flour as much as kefir (200 g)
for every 200 g of kefir - 1 egg
for every 200 g of kefir - 1 tbsp oil
for every 200 g of kefir - 1 tbsp sugar
for every 200 g of kefir - a pinch of salt
for every 200 g of kefir - 0.5 tsp baking soda
Mix all ingredients in a bowl, except for the soda. Add soda to the ready dough and mix.
Leave it covered for 15 minutes.
Do not mix the dough before frying
Scoop onto a heated pan with a spoon or a pastry bag
Fry for about 1 minute on each side with a lid
