Popcorn DOES pop because of the steam pressure within the kernel, so lowering the pressure would in theory make the steam want to escape more violently, meaning less duds. Man, popcorn is so cool.

You guys should try microwaving a vacuum chamber like making plasma in a vacuum chamber. Seal a vacuum (without a metal lid) then put it in the microwave, try to microwave something and start to vaccume the jar at the same time, microwave popcorn until it starts to pop then vaccume it while it still is microwaving. We use an oven that cooks / dries under vac pressure. Liquids come to a boil at a much lower temp. And will gen pull moisture out.

The thing with liquids and vacuum is that they evaporate, so you end up with dried stuff. Maybe if you only vaccum them for a certain amount of time like they did with the pancake you can get something. But I don't really know.

I found it interesting that the candy only burned when air was reintroduced. Seems obvious in hindsight, it can't burn without the O2. So that makes me wonder, is it possible to cook things under much higher temperatures, knowing that the lack of oxygen makes it impossible to burn them, and then cool it before reintroducing the O2.
