Tina is super relatable! She drove me crazy but some people genuinely get defensive when change comes. Her defensiveness was rooted in fear, not malice. She was afraid she'd be pushed out but then she realized what was going on, that she was being pushed to grow and not pushed to leave, and it all came together.The scene between her and Syd made me teary 🤣

I didn't take it as "fear of losing her job". She stated that she loved Michael like family and she had been there for a long time. The reason why her and Richie kept defying and desperately holding onto their old "system" is because any changes would really solidify the idea that Michael is truly gone. They're in denial and acting out against change is their defense mechanism. That's why I loved the character development from Tina and Richie because it is very well earned and meaningful.

It was definitely clear that they were clinging to the old system out of loyalty and love but there was also (without spoiling too much for first time watchers) a pretty clear internal battle going on with Tina as well as some of the other older folks working at the spot - a fear of being left behind and replaced with some new, bougie shit lol. It’s a part of the reason why Tina was ready to hear that her food tasted horrible and was wholly surprised when Syd gave her good feedback. She had resigned herself to the routine and consistency of the daily grind there but it wasn’t helping any of them stretch or grow. She discovered she could thrive under a new system like that instead of having to worry about being pushed out, which is an unfortunate truth about the industry.

It was also to let Sydney know she respects her position in the kitchen the way she respects Carmy's. Earlier in the episode Tina tells Syd "you're not my Jeff" as in she doesn't have to follow her orders like she has to follow Carmy's. Jeff and Jeffrey already started becoming like terms of endearment to Tina by this point but she corrected herself to let Syd know she was taking it seriously/being professional like Syd wanted and would follow her orders the same way she would if Carmy asked her.

"Chef's got that palate where everything tastes good" - the opposite, actually! It's why Carmy's compliment was so meaningful for Marcus. A chef of Carmy's caliber will taste if an ingredient is missing or if another should be there to enhance the flavor, if the texture is off, all of that.

Pan on top can be a thing! If it’s a good heavy pan or putting something heavy in the pan, it helps push the food down > more surface area and pressure > get a good sear for meat or a good grill for veggies, toasting bread/rolls etc.

Tina says "Jeff" as a joke, because Carmy's the one who implemented the kitchen staff calling each other "chef". She's being rude this whole time because she's insecure that she's not a good enough chef and that she won't meet Syd's standards, but when Syd says her potatos are good, it gives her more confidence and she realizes she can actually thrive in the new system.

They're still in denial and acting out against change is their defense mechanism. A clear example of this is the conversation when Richie handed Michael's letter to Carmy. That's why I loved the character development from Tina and Richie because it is very well earned and meaningful.
